1 Medium sweet potato chopped into bite size chunks

3 candied beetroot or any you can find
2 tsp oil or a couple sprays fry light
1tbsp lemon juice
1 tbsp sherry vinegar
1 clove garlic crushed
1 tin butterbeans
2 tbsp dried thyme
5 roughly chopped cherry toms or 2 normal sized
A handful spinach
Pre-heat oven 200 degrees
Peel and quarter the beetroot [you may want to wear gloves]
place in a roasting tray add 1 tsp of the oil or a spray fry light, 1 tbsp dried thyme,vinegar and salt and pepper, Toss to combine all the flavours.
Bake in the oven for 45-55 mins or until tender.
Use the other tsp oil/fry light to coat the sweet pots when coated add The Greedy Fox Cajun seasoning, toss to coat.
Bake for 20-30 mins
Add the butter beans, lemon juice, crushed garlic, 1 tbsp dried thyme with a tbsp water into saucepan and heat through. Set aside.
Now on a plate create your own rainbow of colours.
