A great little soup with a big flavour
1 Butternut squash peeled and chopped into bitesize pieces.
1medium white potato peeled and chopped into bitesize pieces
1 Medium chopped white onion
1 Chopped red pepper
1 stick celery, chopped
1Tbsp The Greedy Fox Mexican Seasoning
700ml Vegetable stock
lime juice to taste
Salt to taste
A handful chopped coriander.
Heat oil over a medium heat add the Squash,potato,onion,red pepper and the celery saute for 10 mins.
Stir in The Greedy Fox Mexican seasoning and cook for another 1-2 mins until the spices release their aroma.
Pour in the stock bring to the boil then reduce heat and simmer for 30 mins or until the veg is tender.
Stir through sweetcorn cook for another 1 min.
Add lime juice to taste
Top with coriander and serve.
Serve topped with dairy free yogurt/soured cream and or sourdough or tortillas.
