The Greedy Fox Mexican Superfood Broth

Serves 2-4


1 Tbsp Rape seed oil

100 gr Cauliflower cut into bitesize florets

1 Carrot chopped

1/2 White onion chopped

1/2 courgette chopped

1 Tbsp The Greedy Fox Mexican seasoning

50 gr Dried red lentils

1 Tbsp tomato puree

1/4 Savoy cabbage, stalk removed and leaves sliced

1 Tbsp fresh thyme

800ml Good quality veg stock or bouillon


In a large heavy bottomed saucepan add the oil, onion and carrot, fry over a med high heat for 5-7 mins until the edges of the veg start to brown.

Add in The Greedy Mexican seasoning and the lentils, cook for another 1 minute

Pour in the veg stock/bouillon and the tomato puree, cauliflower and courgette with the thyme. Bring to the boil and reduce to a simmer,Cover and cook for 10 mins.

Add the savoy cabbage and simmer for 3-5 mins until the veg is soft.

Serve piping hot with some toasted tortillas.

Tip, Try adding some left over chicken from your Sunday roast to the broth for meaty treat.
