The Greedy Fox Leftover Quesadillas

Ingredients and Method

 

The ingredients can be what ever is left in your fridge. The amounts depend on what you have. Here we used…..

 

Leftover roast chicken, shredded.

The end of a chorizo ring

Red onion

Garlic

Chilli

Cheese.  Left in our fridge was 1 mozzarella ball and chedder

Coriander

Tomato

Lime juice

1/2 a bowl of  The Greedy Fox Lentil Chilli

1 baking potato

A few slices of ham.

 

For the Quesadillas.

 

Chicken and chorizo

In a bowl mix the shredded chicken, chorizo, onion and cheese in a bowl, until well mixed. Add sliced chilli for a spicy kick.

Assemble your tortilla, Spoon some of the mix onto 1 half of the tortilla and fold. Continue until you’ve made the desired amount or you’ve ran out. Fry in a frying pan with a spray fry light over a medium/high heat for 2 mins each side.

 

Ham and cheese 

Ina bowl mix ham and cheese together in bowl.

 Assemble your tortilla, Spoon some of the mix onto 1 half of the tortilla and fold. Continue until you’ve made the desired amount or you’ve ran out. Fry in a frying pan with a spray fry light over a medium/high heat for 2 mins each side.

 

Chilli and cheese

Assemble straight onto your tortilla. Spoon the chilli onto half of the wrap and top with cheese and fold in half. Fry in a frying pan with a spray fry light over a medium/high heat for 2 mins each side.
