Using the slow cooker we create a wonderful hearty veg packed meal.
1 onion, roughly chopped
2 Carrots chopped into bitesize pieces
1 Celery stick, roughly chopped
1 Red Pepper, diced
1 Green Pepper, diced
8 Dried apricots, sliced
500ml veg Stock
1x400g Tin Tomatoes
1x400g Tin Chickpea, drained.
1 large potato, peeled and roughly chopped.
Place all ingredients in the slow cooker cook on high for 4hrs or low for 8.
Serve on cous cous with pitta breads.
