The Greedy Fox Caribbean Fish Bites

A brilliant summer lite bite crispy on the outside lusciously soft and juicy on the inside. A taste sensation.

Ingredients

400g Fillets Pollock [line caught] cut into large bite size pieces

200g plus 3tbsp gluten free self raising flour

1/2tsp Baking powder

250g Soda water/Beer

1 Heaped tbsp The Greedy Fox Caribbean Seasoning

Fresh squeezed lime juice

Sea salt

oil for frying

Method

Heat oil to 180deg

In a large bowl mix 200g flour with The Greedy Fox Caribbean seasoning and baking powder, make a well in the centre and slowly add the soda water/lager whisking continuously to form a smooth batter.

Toss the fish pieces the remaining flour to coat all. Lightly season with a little sea salt.

Dredge a few chunks of fish in the batter then deep fry for 3-4 mins until crispy and golden. Repeat with the remaining fish.

Drain on kitchen paper.

Squeeze over a little lime juice and serve while hot.
