One of our favourite street food feast inspired by a visit to Prawnography, Dinerama in Shoreditch London.

Tip. Cant find buttermilk? Use a pint of full fat milk and 25ml fresh lemon juice mix well and leave to stand for 1/2 hour.
Serves 4
5oog medium uncooked prawn
250ml buttermilk
100g plain gluten free flour/ normal flour works just as well.
50g cornflour
1tbsp The Greedy Fox Cajun seasoning
200g Panko Breadcrumbs
1 Egg
Spicy yogurt dressing
200ml Natural yogurt
1Tbsp Tomato ketchup
1Tbsp cider vinegar
1/2 White Onion finely diced
1 Gherkins finely diced
1Tsp Tomato puree
1Tbsp Franks hot sauce
Salt And Pepper

Place all ingredient into a mixing bowl mix well and season to taste chill for 20 mins before serving
Pre heat fryer 175deg
Mix buttermilk, flours, egg, salt and pepper and half The Greedy Fox Cajun Seasoning taste adjusting as necessary and set aside.
In a large mixing bowl combine the Panko breadcrumbs and other half The Greedy Fox Cajun seasoning.
Place the prawns into the buttermilk and 1 at a time dredge through the panko breadcrumbs  pressing gently to coat.
Then working in batches fry prawns for 2-3 mins.
Serve with steamed asparagus and sea veg.
