This Red Thai Sweet Potato curry is a tasty exotic flavour explosion easily boasting 3 of your 5 a day. Make it as spicy as you like perfect for a all in one family meal.

Ingredients

Serves 4

2 Medium Sweet Potato, peeled and chopped into bitesize pieces

1 Onion, diced

2-3 Tbsp The Greedy Fox Red Thai Curry Paste

A small handful chopped green beans

1X400G Tin reduced fat coconut milk

1veg stock cube

1 Red Pepper, deseeded and sliced

Coriander

1 Lime, half juiced half cut into wedges to serve

1Tsp Oil

Method

Fry the onion over a med/high heat in the oil in a large saucepan or wok for 5 mins.

Stir in The Greedy Fox Red Thai Paste and cook for a further 2 mins.

Add the sweet potato and toss to coat then carefully pour over the coconut milk, half fill the coconut milk tin with cold water and crumble in the stock and add to the frying pan/wok bring to the boil and simmer for 15 mins.

Put the red pepper, green beans, mini sweetcorn and mange tout in the curry simmer for another 5-10mins until all the veg is cooked through.

Taste and season accordingly

Squeeze over lime juice and stir through coriander.

Serve this Red Thai Sweet Potato Curry over boiled rice.

Pumpkin Curry is a beautifully filling vegan main course. Perfect to make ahead of time and let all the flavours develop.

Ingredients

Quick Goan Paste

1 tbsp The Greedy Fox Goan Seasoning

1-2Tbsp Oil or Water

Curry

1 onion roughly chopped

500g pumpkin/squash peeled and roughly chopped

400g tin chickpea

150ml Vegetable Stock

400ml Coconut milk

Coriander roughly chopped

1 lime, juice only

1 Green Chilli

Method

Mix The Greedy Fox Goan seasoning with 1-2 tbsp oil/water to make a loose paste.

Sauce the onion over a medium heat in the loose paste for a few mins until soft.

Add the pumpkin to the onion and continue to sauce for 5mins.

Pour in the stock and coconut milk, simmer for 5 mins.

Add the chickpeas and mix, simmer for 10-15mins until the pumpkin is soft.

Squeeze in the lime juice and mix, scatter over the coriander and serve.

This Pumpkin curry is perfect served with rice and naan bread.

1 tsp garlic

1tbsp honey

1 tsp ginger

Ingredients 

1 White Onion Finely diced

1 Tbsp The Greedy Fox BBQ Seasoning

500ml cheap ketchup

75ml American yellow mustard

50ml cider vinegar

1 lime, juice only

50ml Worcestershire sauce

1 Tsp garlic [we use lazy]

1 Tbsp English Mustard

Shot Bourbon.  [Optional]

1 Tbsp Liquid Smoke [optional, gives that smokey kick]

150g soft brown sugar.

Hot Sauce such as franks [Optional, gives that spices kick add as much as you can handle]

Method

Over a medium heat gently fry the onion and garlic in the oil until soft and translucent.

Add The Greedy Fox BBQ Seasoning and cook for a further 2 mins.

Carefully add the rest of the ingredients bring to a boil then reduce to a simmer and cook for 15-20 mins until thick and syrupy.

Mediterranean Paste by The Greedy Fox

The Greedy Fox Mediterranean Paste is a perfect blend of roasted pepper and tomato beautifully infused together with herbs and spices from around the Mediterranean. This paste can be used as a coating for chicken, fish or create the best med veg you’ve ever tasted. It has been known to use this as a dip with a bag of tortilla chips too! Naughty but nice! Most importantly this paste makes dinner easy! It can be made in batches and frozen so dinner can be made quickly and easily of an evening.

If you’re using with fish or chicken, literally just coat with the paste and cook as required. To make med veg just add a few tbsp of paste your paste to your chopped veg and give it a good stir, making sure all the veg is coated and then pop in the oven.

Ingredients 

1 Onion, roughly chopped

1 Tbsp  The Greedy Fox Mediterranean Seasoning

A Roasted red pepper [from a jar]

1 Tbsp Tomato Puree

Oil (roughly 70ml)

7 or 8 Basil leaves

Salt and pepper to taste

1/2 lemon juice only.

Homemade Onion Bhaji are well worth the hassle. a perfect snack or accompaniment for your favourite Indian meal.

Ingredients

500g White onion.

1 Tbsp The Greedy Fox Goan Seasoning

100g gluten free plain flour/ normal flour will work just as well

1 red chilli finely chopped [optional, if you want a kick]

Handful roughly chopped coriander

A few TBSP water

Method

Cut the onions in half, remove the root and peel.

Slice the onions and add to a bowl with the chilli [if using], Goan seasoning mix well.

Pre heat the fryer 180deg

Add the coriander and flour to the onion mix and season to taste.

Pour the water in a TBSP at a time mix well to form a batter thick enough so that when rolled in to loose balls they hold their shape.

With moistened hands roll into loose balls.

Working in small batches carefully drop each ball into the fryer and fry until golden.

Serve the Onion Bhaji with yogurt as a snack or as an accompaniment to your favourite Indian meal

These really are the most perfect, perfect chips/Wedges. Ready in well under an hour. Why not make a large batch and just before cooking place in the freezer to cook when required [adjust cooking times accordingly]

Ingredients

Large potatoes

The Greedy Fox Seasoning of your choice

oil

Method 

Chop the potatoes into 1cm thick chips. For wedges cut the potatoes in half then each half into half again then each quarter into 2/3 wedges [depending on size of potato]

Bring a large saucepan of salted water to a boil

Preheat oven 200 deg

Carefully add the chips/wedges boil for 6/7 mins until soft to touch but not falling apart.

Drain potatoes and leave for 5mins to steam dry.

For over 1-2tbsp oil to potatoes and toss to coat.

Add 1-2 tbsp of your favourite Greedy Fox Seasoning [If using chip salt season after cooking]

Place on a baking tray and bake for 25-30 mins or until golden and crispy, give wedges an extra 10 mins.

Serve these Perfect chips/wedges as you choose they are great on their own or just as good

The slow cooker Goan vegetable curry by The Greedy Fox is infused with delicious coconut milk and our secret blend of aromatic Goan spices giving you a wonderful fruity curry.

Ingredients 

Goan paste

1 heaped tbsp The Greedy Fox Goan Seasoning

A handful Coriander stalks

100ml Coconut milk [use 100ml from the tin below]

2 tbsp Soy sauce or your gluten free alternative

1 onion roughly chopped

Green chilli [optional, add it if you want heat]

Curry

200ml Chicken or Veg Stock

300ml tin coconut milk

200g Squash, roughly chopped into bitesize chunk

1 red pepper, roughly chopped into bitesize chunk

Coriander leaves, chopped

1 Aubergine, roughly chopped into bitesize chunk

100g frozen peas

50g Spinach

1 Tbsp Gluten free flour/normal flour will work just as well.

1 lime, juice only.

Method

To make the paste.

Place all the paste ingredients into a blender and pulse until all well blended and paste like.

Curry

Tip the paste onto the chopped veggie and toss to coat.

Add the stock to the slow cooker.

Tip the veggies into the slow cooker, set to low and cook for 6 hrs.

After 5 1/2 hrs tip in the frozen peas.

Add the flour to the coconut milk and whisk to combine.

Tip coconut milk into the slow cooker carefully stir to combine, replace the lid and leave for the last 30 mins.

Stir through the spinach at the last minute.

Serve the slow cooker Goan vegetable curry piping hot in bowls with naan breads on the side.

This Jerk Marinade is blended together in a matter of seconds it works brilliantly on chicken, pork, fish and veggies. Using only a few simple ingredients and The Greedy Fox Caribbean seasoning and whizzing it together in a food processor it really couldn’t be easier.

Ingredients 

1 onion roughly chopped

70ml Oil

1 Tbsp The Greedy Fox Caribbean Seasoning

Coriander stalks

1Tbsp honey [optional]

1tsp Garlic

Green chilli [optional]

Salt to taste.

Method

Put everything excluding the salt into a food processor and blend until smooth.

Taste and season to your liking.

Indian Goan Fried Potatoes by The Greedy Fox

Indian chopped potatoes

The Greedy Fox Indian Goan Fried Potatoes are the perfect side dish to make with leftover roasties, mix them with our Goan seasoning for a perfect side dish for any Indian meal. They are sort of our version of Bombay Potatoes (but better obviously!) A very cheap, very simple dish that will spice up your potatoes.

Ingredients 

500g White potatoes, peeled and chopped into bitesize pieces.

1 Tbsp The Greedy Fox Goan Seasoning.

1/2 White onion, Sliced.

1 Tsp Garlic [We use lazy]

4 Tomatoes, Quartered.

1 Tsp Ginger [We use lazy]

Chopped Coriander.

1 Tbsp Oil or your low fat alternative.

 

 

Method

Bring a large pan of salted water to a boil and carefully add the potatoes. Boil until soft [Around 6 mins]

Drain Potatoes

Not including the coriander and the oil, add all the other ingredients to a large bowl and mix well being careful not to break up the potatoes to much.

Heat the oil in a large frying pan over a medium/high heat fry the potatoes until crispy and golden. Don’t overcrowd the the frying pan work in batches if you need to.

These also work brilliantly with leftover roast potatoes.

Serve the Indian Goan fried potatoes while hot.
