Wow! Our Greedy Fox BBQ seasoning makes these plain ingredients come alive for our Bean Burger recipe. Its perfect for Vegans and makes a great alternative to those trying to have more meat free days. Our favourite buns are brioche buns, the sweetness in them really completes the dish. For a little spice we add some chill sauce on top. We love to make a selection of these, making the mix and then just adding a different Greedy Fox seasoning. Play around, make it your own.

Serves 2

Ingredients

150g cooked mixed beans [we used black beans, pinto beans and chick pea you can buy tins of mixed beans)
25g sweetcorn (drained)
Chopped chilli [use as much as you can handle, optional]
Handful coriander
The juice of half a lime
2-3 tablespoons gluten free plain flour
2 tablespoons The Greedy Fox BBQ seasoning

Wholemeal Baps or Brioche Buns or Gluten free rolls of choice

Method

1) Place all ingredients into a food processor and pulse until combined but leaving a little texture in the mix.
2) Shape into patties and fry in fry light or 2 teaspoons rapeseed oil [or oil of your choosing)

3) Serve in a wholemeal bap or brioche bun with a thick slice of tomato and some fresh salad leaves, baked sweet potato fries on the side

Beef Burgers

Dont be fooled by this Steak Burger it only has a maximum of six ingredients but it packs a big flavourful punch so much so store bought burgers will never taste the same again. A burger is a personal meal everyone likes theirs a little different although every body will love this burger.

Ingredients (serves 4)

500g Good quality Beef Steak Mince

1Tbsp of the Greedy Fox Burger and Steak Seasoning

1Tsp English Mustard

1 Egg Yolk

1Tbsp Worcestershire sauce

1/2 a finely chopped Onion [optional]

Burger toppings of your choice (we like avocado, cheese, and beef tomatoes)

Method

 Add the seasoning, egg yolk and 1 tsp English mustard to the meat

 Mix well (add Finely chopped onions if desired)

Form into equal patties

Grill on medium heat for 8-10 mins on each side, even better over hot coals.

Toast the bun, top the bottom of the bun with lettuce then tomato then the burger finish with your favourite pickles.

Serve with an ice cold beverage of your choice.

If someone was to ask me what a traditional British food is I would probably say..Fish and Chips, Pie and Mash and Bubble and Squeak. We got used to living on leftovers and this was always a staple Monday night dinner. Turning this into Mexican Bubble and Squeak will transform this traditional favourite. The best thing about bubble and squeak is that is has no timeframe, its not wrong to eat it for Breakfast, Brunch, Lunch, Dinner or Supper. There is always a right time for bubble and squeak!

 

Serves 2 but easily doubled.

Ingredients

500g of leftover veg. We had roast potato, roast sweet potato, sprouts, peas and mushy peas leftover from Sunday dinner.

2 Tbsp The Greedy Fox Mexican Seasoning

1 Tbsp flour

1-2 tbsp water if mix seems a little to dry.

A little flour for dusting.

1 Egg

Marks and Spencer Mole Paste (this is a nice to have, don’t panic if you can’t get this it will still be delicious.

 

Method

Pre-Heat Oven 200 degree

In a bowl big enough for the veg add The Greedy Fox Mexican seasoning and mash until its at your desired consistency. If a little dry add the water 1 tsp at a time.

Form into 100 gram burger style patties.

Dust with a little flour.

Line a baking tray with grease proof paper top with the veg patties and bake for 15-20 mins turning half way through.

Top with a Fried Egg and we like to use the Marks and spencer Mole paste diluted into a cheeky little sauce. But this is optional.

Baked Avocado Wedges

We Make these Baked Avocado Wedges just because we love avocado and we love wedges.  So after a little tinkering this is the finished recipe, they are well worth the effort and a brilliant side dish or a perfect snack.

Ingredients

Serves 2

1 Avocado

2 eggs beaten

100 grm gluten free plain flour

4o grm Panko breadcrumbs. If you cant get panko any breadcrumbs will work.

1 tbsp The Greedy Fox Burger and Steak seasoning

 

Method

Pre heat oven 220 deg

Cut the Avocado in half and remove the stone

Run a spoon between the flesh and skin to remove the flesh keeping the Avocado in one piece, and repeat with the over half.

Cut avocado into wedges. you should get around 8.

In 3 large bowls put the flour and The Greedy Fox Burger and Steak seasoning into one bowl and mix well the eggs into another bowl then the breadcrumbs in the final bowl.

Line a baking tray with greaseproof paper

Coat the avocado in the flour then the egg and finally into the breadcrumbs and place on the baking tray.

Repeat with the remaining wedges.

Cook in the oven 12-15 mins.

Slow cooked Meaty Ribs by The Greedy Fox

Slow Cooked Meaty Ribs

Slow Cooked Meaty Ribs is one of those times where you wish the internet had taste-vision as no words we use to describe these will be enough. Now there are two stages to these, you can eat them as dry ribs or we’ve included a recipe for BBQ sauce which really will take them up a notch. Make sure you get good, meaty ribs from your butcher. We recently served these at a BBQ everyone went silent as soon as they started eating. The best thing about them is that you can do the cooking in the morning or the day before and then all you need to do is pop into the oven for 20 minutes before serving, giving you more time to play host.

Serves 4

Recipe Cost: £6.96

Ingredients (Ribs)

1kg Beef Ribs
2-3 Tbsp of The Greedy Fox Steak and Burger Seasoning
1/2 Cup of Water

Ingredients (BBQ Sauce)

150 ml ketchup

4tsp Vinegar (malt)
150ml Stout
4tbsp Golden syrup
2 tsp English mustard
1 clove of crushed garlic
1/2 deseeded and chopped red chilli (optional)

Method

Preheat oven 140 degree

Add the ribs to a baking tray and rub the seasoning all over the ribs, lay them out evenly spaced on the tray, add half a cup of water.

Cover the tray with a triple layer of tinfoil. Cook on 120 for 4 hours.

Add all the ingredients for the sauce  to a pan and bring to the boil, reduce the heat and simmer for 15-20 minutes until syrupy.

Remove from oven, drain the fat from the tray

Turn the oven up to 180degree

Cover the ribs with the BBQ sauce and cook uncovered for 20 minutes (basting as you go)

5) Enjoy!

These roasted chickpeas are delicious nutritious snack full of fibre a great alternative to nuts. We have made them here with our BBQ Seasoning but you can use any. Its a real budget recipe, chickpeas are cheap as chips. To be honest, chickpeas are heavily underated, we make delicious hummus with them and then we reserve the aquafaba (the water from the tin of chickpeas) to make delicious chocolate mousse. Basically if you’re vegan, or trying to eat a little bit more that way then the aqufaba is a fantastic substitute for eggs. Ingredients

1 400g tin chickpea

2tbsp olive oil

1 tbsp Your favourite Greedy Fox Seasoning. We love these in BBQ and Moroccan but as with all our recipes they are interchangeable so grab whichever is closest and go for it!

 

Method.

Preheat oven 220deg

Drain the chickpeas and dry.

Toss them in a bowl with oil and your favourite Greedy Fox seasoning.

Line a tray with baking paper.

Spread the chickpeas in a even layer on the baking tray and bake for 30-40 mins watching the last 5 mins carefully to avoid burning.

Enjoy while hot.

These Potato Wedges are incredible, they work with all of our seasonings, its just depends what you are in the mood for. We love the fact that with The Greed Fox Seasonings you can cook the same quick, easy meals with a different taste every time and with this easy recipe you can guarantee perfection! Cheap as chips!! (excuse the pun!) Our top tip to cook these is to use a chip tray (baking tray with holes in) This recipe will feed the family

Serves 4 (as side)

Ingredients

3 large baking potatoes

Your Greedy Fox Seasoning of Choice

1tbsp oil or you healthy alternative

 

Method

Preheat oven 180 degrees

Slice the potatoes into wedges (You roughly want 6-8 wedges per potato but any size is good, but the bigger they are the longer they will take to cook so adjust Cooking times accordingly)

Bring a large pan of salted water to the boil

Add the wedges and boil for 8-10 minutes or until soft

Drain

Add potatoes to a bowl, coat with the oil of your choice and then add 1 tbsp of your Greedy Fox Seasoning toss to coat

Place on a tray skin side down and bake for 20 minutes or until golden

Enjoy and think of which seasoning you want to try wth them tomorrow!!!

Baked Eggs with Mushroom and Chorizo by the Greedy Fox

Baked Eggs and Chorizo

This Baked Eggs with mushroom and chorizo recipe is one of those recipes where the quantity of ingredients are based on the amount of people you are cooking for, here we are only cooking for 1. Get creative and use up any leftovers in your fridge, Smoked salmon, Ham and Eggs even sausage and bacon are a few of our regular concoctions.

 

Ingredients

A handful of fresh spinach

100 gram chorizo peeled and roughly chopped

We used a pack of dried porcini mushroom, but any thickly sliced mushroom will be just as good.

1 large free range egg

salt and pepper to taste

1 Tsp of The Greedy Fox seasoning of your choice

Method

Pre-heat oven to 180 degree

Grease your oven dish with fry light.

Build your bowl starting with the spinach next add the mushroom then the chorizo make a well in the centre and crack in the egg bake for 8-10 minutes until whites are set and yolks are still runny/or cooked to your liking.

Baked Eggs with Mushroom and Chorizo are perfect served with griddled toast and your favourite morning beverage.

Steak Meatballs by The Greedy Fox

Steak Meatball Pasta

These Steak Meatballs are are simple to make and delicious treat. We make all of our meatballs with the children they love getting their hands in amongst it all

 

Ingredients

500gr  Beef steak mince

1 tbsp The Greedy Fox Steak and Burger seasoning

1 egg yolk

1tbsp Worcestershire sauce

200 gr fusilli pasta, or your favourite.

400g  Tin tomatos

1 tsp oregano

1Tsp garlic crushed

1 veg stock cube

1 tbsp tom puree

salt and pepper to taste

Fresh chopped basil

Parmesan shavings

Method

Pre heat oven to 180 degrees

Add the beef steak mince and The Greedy Fox Steak and Burger and Steak seasoning to a mixing bowl, mix well and make into walnut sized balls. Transfer balls to a baking tray and bake for 10-13mins.

Bring a large pan of salted water to the boil and add the pasta, cook as per pack instructions. Then drain. Return the pasta to the pan. Not on the heat.

For the quick pasta sauce add the tinned tomatoes oregano crushed garlic stock cube and the puree bring to the boil, then reduce and simmer for 10 mins until thick and pulpy.

Add the sauce to the pasta then the meatballs carefully mix well, scatter basil over and serve. Finish with the parmesan

Serve  these vicious Steak Meatballs with a fresh green leaf salad and garlic bead. Or perfect made in advance for lunch boxes.

Steak Cottage Pie by the Greedy Fox

Cottage Pie

Cottage Pie is an old family favourite, revamped with The Greedy Fox Burger and Steak Seasoning. Our Burger and Steak Seasoning gives any beef recipe a real richness in flavour. This is an old classic just made even better with a touch of The Greedy Fox.

Ingredients

Filling

500g Beef Steak Mince

1 tbsp of Greedy Fox Burger and Steak Seasoning

1 large onion, peeled and chopped

2 carrots, washed, trimmed and diced

2tbsp plain gluten free flour normal flour works just as well.

550ml beef stock

1 clove garlic, peeled and crushed

1tbsp tomato puree

1tbsp Worcestershire sauce

For the mash topping

500g potatoes, peeled and cut into squares

225g carrots, peeled and diced

40g cheese

Method

Preheat oven 180 degree

Add the mince to a large frying pan. Fry for 6mins, until browned. Add the garlic, onion and  first lot of carrots and cook for another 2mins.

Add flour and Greedy Fox Burger and Steak Seasoning and cook for roughly a minute

Make the stock and add to the pan,

Add the Worcestershire sauce and tomato puree.

Bring to the boil cover and simmer for 10-15mins, uncover for final 5 minutes

Add the potatoes and carrots to a salted pan of boiling water and boil for 25 minutes or until soft and then mash (we use a potato ricer for perfect mash every time)

Add the mince mixture to a shallow oven dish and then spoon the potato mixture on top.

Now sprinkle little cheese for luxury and place in the oven for 20 mins until bubbling.
