This all in one Easy Meatball Traybake couldn’t be easier a real hearty and warming meal.

Ingredients

500g Good quality Beef Mince

1 Tbsp The Greedy Fox Steak & Burger seasoning

1 Egg Yolk

Basil

400g tin tomatoes

1 Onion finely diced

A chicken stock cube

1 Tbsp The Greedy Fox Mediterranean seasoning [optional]

Salt and pepper to taste

1 tsp Garlic [we use lazy]

A mixture of cheddar and mozzarella

Method

Pre Heat oven 180deg

Add Beef mince to a large bowl Season with the Greedy Fox burger and steak seasoning add the egg yolk and mix well.

Roll mince into walnut sized meatballs [you should get around 20].

Add all other ingredients to a roasting tray mix well and season to taste.

Cover tray with foil and roast for 25mins

Remove tray from the oven, uncover and add the meatballs. Cover again and cook for 15mins.

Uncover and turn oven up to 200deg add cheese and cook for 10mins or until the cheese is golden and bubbling and the meatballs are cooked through.

Stir cooked pasta through this Easy Meatball Traybake for a delicious family meal.

These really are the most perfect, perfect chips/Wedges. Ready in well under an hour. Why not make a large batch and just before cooking place in the freezer to cook when required [adjust cooking times accordingly]

Ingredients

Large potatoes

The Greedy Fox Seasoning of your choice

oil

Method 

Chop the potatoes into 1cm thick chips. For wedges cut the potatoes in half then each half into half again then each quarter into 2/3 wedges [depending on size of potato]

Bring a large saucepan of salted water to a boil

Preheat oven 200 deg

Carefully add the chips/wedges boil for 6/7 mins until soft to touch but not falling apart.

Drain potatoes and leave for 5mins to steam dry.

For over 1-2tbsp oil to potatoes and toss to coat.

Add 1-2 tbsp of your favourite Greedy Fox Seasoning [If using chip salt season after cooking]

Place on a baking tray and bake for 25-30 mins or until golden and crispy, give wedges an extra 10 mins.

Serve these Perfect chips/wedges as you choose they are great on their own or just as good

This Hunters Chicken is an all time classic comfort dish. The way we make this simple bbq sauce means it is super lean and healthy and will work with most slimming plans without taking anything from the flavour.

Ingredients

For The Chicken

4 Chicken breasts

1tbsp The Greedy Fox BBQ seasoning

4 Rashers of bacon

160g Chedder Cheese

80g Mozzerella

BBQ Sauce

1tbsp Tomato puree

4oog Passata

1tbsp Worcestershire sauce

Chicken stock cube

1tsp Balsamic vinegar

1/2 Lime, Juice only.

1tbsp The Greedy Fox BBQ seasoning

Method

For The Sauce

Pre heat oven 180deg

Place all the sauce ingredients into saucepan, bring to a boil and reduce to a simmer and simmer for 15-20 mins.

Put the chicken breasts into individual roasting dishes or all in together and cover with bbq sauce cook in the oven for 25mins.

Remove from the oven and top each chicken breast with a rasher of bacon and top with cheese.

Place back into the oven for 10mins or until the cheese is melted and golden.

We serve our Hunters Chicken with a crunchy green salad and good old fashioned chips.

BBQ Pulled Pork is soft and juicy, this recipe will be a firm family favourite after the first mouthful. Pair this pork with your best bbq sauce and or hot sauce and you will have an instant crowd pleaser.

Ingredients

1.5kg  Shoulder Pork [bone in or out it doesn’t matter]

1 Onion thickly sliced

300ml Good quality chicken stock

1 heaped tbsp The Greedy Fox BBQ Seasoning

1Tbsp Oil

Method

Remove all visible fat from the pork [perfect for crackling]

Heat a large frying pan on high add the oil and sear the pork on all sides until golden.

Add the sliced onion and chicken stock to the slow cooker

Season a chopping board with The Greedy Fox BBQ seasoning and roll the pork to coat.

Place in the slow cooker, cook on low for 8hrs.

After the 8hrs pull apart with 2 forks.

Our BBQ pulled pork is perfect as a filler for tacos, salad, wraps and even dirty fries

Not using a slow cooker

After searing and rolling pork in The Greedy Fox BBQ seasoning  add the sliced onion to a roasting tray, place the seared pork on top add 1/2 the stock to the pan and double wrap the top of the pan in tin foil, cook @140 deg for 6hrs.

This Spanish Chicken Stew is packed full of Mediterranean flavour from beautiful chorizo, green olives, tomatoes and The Greedy Fox Mediterranean seasoning.

Serve this summer warming stew with rice and crusty bread to mop up all the delicious juices.

Ingredients 

1 Tbsp The Greedy Fox Mediterranean Seasoning

1 Whole white onion, roughly chopped

6-8 Chicken thighs, skin removed

100g chorizo, roughly chopped

2 peppers, deseeded and roughly chopped

100g pitted green olives

100ml good quality chicken stock

400g Tin Tomato

1 Tbsp Tomato Puree

1 Tbsp Oil

Method

Add 3/4 of the stock to the slow cooker with the onion, tomato puree, tomatoes, peppers, olives and The Greedy Fox Mediterranean seasoning and mix well.

Heat the oil in a frying pan add the chicken thighs and chorizo and fry until starting to colour [you may need to do this in batches]

Add the chicken thighs and chorizo to the slow cooker

Pour the reserved stock into the pan and deglaze scraping up all the crispy bits [it is all flavour]

Set the slow cooker to low and cook for 6hrs.

This Spanish Chicken Stew is perfect served with rice and crusty bread.

Slow Cooker Mexican Barbacoa Beef by The Greedy Fox

Calling all Taco lovers our Mexican Slow Cooker Barbacoa Beef is a recipe the whole family will enjoy. You can serve as a Barbacoa taco or a simple meal with rice. It is essentially Mexican Shredded beef. This easy recipe is one of the reasons we love our slow cooker, beef cooked slowly remains juicy and melts in your mouth.

In traditional Mexican culture this is cooked over a hole in the ground and its actually where the word BBQ came from!

Ingredients 

2 Tbsp The Greedy Fox Mexican Seasoning

1Kg Beef Brisket

1 Tbsp Tomato Puree

Salt and pepper

1 Onion, sliced

300ml Beef stock

1 Tbsp Oil

Handful chopped coriander

Method

Pre heat slow cooker if required.

Season the beef liberally with salt and black pepper And The Greedy Fox Mexican Seasoning

Carefully add the oil to a hot frying pan over a high heat and sear the beef continue on all sides until golden, then set aside.

Add the onions, beef stock, tomato puree to the slow cooker and mix well.

Place the beef on top of the onion mixture and cook on high for 1hr then reduce to low and cook for 7hrs.

After 7hrs remove lid and pull meat apart with 2 forks.

Sprinkle with coriander

Perfect as a filling for tacos serve with guacamole, sour cream and jalapeños

Lentil Chilli by The Greedy Fox

Vegan Lentil Chilli

This recipe uses our Mexican Seasoning to create a stunning Lentil Chilli. The whole recipe is entirely Vegan but don’t be put off if you are a meat eater, the lentils soak up the flavour of the seasoning and make a truly mouth watering chilli. There are so many varieties in the way you can serve this one too, add to tacos, service with boiled rice, add to tortilla chips for delicious nachos plus we always have the leftovers on a jacket potato the next day.

 

Serves 6

Ingredients

A Medium white onion-diced
1 Red pepper-roughly diced
400g Tin  chopped tomatos
1 tin kidney beans (drained)
400g Tin Brown lentils (drained)
1/2 Tin [use the empty brown lentil tin] veg stock
Handful of fresh Coriander
1-2 tsp of The Greedy Fox Mexican seasoning
1-2 teaspoon rape seed oil

Method

1) Cook the onions and peppers in 1-2 teaspoon of rape seed oil on a med heat until onions are translucent

2) Add The Greedy Fox Mexican Seasoning and stir through.

3) Add the tinned tomatoes, lentils and kidney beans fill lentil tin half way with veg stock and add to the chilli.

4) Simmer for 15 mins until thick and beans are soft but still hold their shape

5) Stir through the chopped coriander at the end of cooking.

This stunning Lentil Chilli is brilliant served over rice or in as nachos or even as a filling for the humble jacket spud.

Mexican Stew

This Mexican stew is the ultimate comfort food, warming with amazing flavours we love to eat this after a long day. Well to be honest we just love to eat it!! This recipe uses our Mexican seasoning and is totally Vegan. Not only that but its really low fat. This dish is equally as good cold the next day for lunch.

Serves 4

Ingredients

1 Tin chopped tomatoes

2 Tsp of The Greedy Fox Mexican Seasoning

1 tsp tomato puree

1/2 sliced red pepper

1/2 sliced green pepper

1 medium red or white onion

1/2 tin vegetable stock (using the tomato tin)

1 bag boil in the bag brown rice, cooked.

100g drained sweetcorn

100g cooked mixed beans

A handful of chopped Coriander

juice 1/2 lime

 

Method

1) Fry the onions and peppers until soft

2) Add 2 Tsp of The Greedy Fox Mexican seasoning

3)Fry for 1 minute

4) Add the tomato Puree and cook for another minute

5) Add the beans, chopped tomatoes, veg stock and simmer for 10-15 minutes

6) Add the sweetcorn and the rice and cook for another 5 minutes

7) Take off the heat, stir through the Coriander and lime juice and serve.

 

Steak Cottage Pie by the Greedy Fox

Cottage Pie

Cottage Pie is an old family favourite, revamped with The Greedy Fox Burger and Steak Seasoning. Our Burger and Steak Seasoning gives any beef recipe a real richness in flavour. This is an old classic just made even better with a touch of The Greedy Fox.

Ingredients

Filling

500g Beef Steak Mince

1 tbsp of Greedy Fox Burger and Steak Seasoning

1 large onion, peeled and chopped

2 carrots, washed, trimmed and diced

2tbsp plain gluten free flour normal flour works just as well.

550ml beef stock

1 clove garlic, peeled and crushed

1tbsp tomato puree

1tbsp Worcestershire sauce

For the mash topping

500g potatoes, peeled and cut into squares

225g carrots, peeled and diced

40g cheese

Method

Preheat oven 180 degree

Add the mince to a large frying pan. Fry for 6mins, until browned. Add the garlic, onion and  first lot of carrots and cook for another 2mins.

Add flour and Greedy Fox Burger and Steak Seasoning and cook for roughly a minute

Make the stock and add to the pan,

Add the Worcestershire sauce and tomato puree.

Bring to the boil cover and simmer for 10-15mins, uncover for final 5 minutes

Add the potatoes and carrots to a salted pan of boiling water and boil for 25 minutes or until soft and then mash (we use a potato ricer for perfect mash every time)

Add the mince mixture to a shallow oven dish and then spoon the potato mixture on top.

Now sprinkle little cheese for luxury and place in the oven for 20 mins until bubbling.

What is better than stew on a cold winter night? Slow Cooker Beef Stew that you put in before you went to work and come home to zero fuss and a lovely dinner! Stew is always better the next day in our opinion so make plenty so you have leftovers. Stew just isn’t the same without dumplings so we’ve even given you a fail safe recipe for those too! Of course you’ll be too busy eating to say thank you but we know you’re thinking it!

A hearty meal for those cold nights.

Ingredients

Stew 

500g shin of Beef chopped into Bitesize pieces
2tbsp Gluten Free Plain Flour
1 Large Potato peeled and chopped into Bitesize pieces
3 Medium carrots chopped into Bitesize pieces
2 Medium Parsnips chopped into Bitesize pieces
1 leek chopped into Bitesize pieces
A small swede chopped into Bitesize pieces
1 medium white onion roughly chopped
600ml Beef sock.
Salt and Pepper to taste.

Dumplings

100g self raising flour
50g suet
Fresh Thyme
Salt and Pepper
Water.

Method

For the stew put the beef in the slow cooker add the flour and The Greedy Fox Smokey Steak seasoning stir to coat.
Add the other ingredients in the order list above.
Cook on low for 4 hrs.

For the dumplings.

Mix together the suet, flour, fresh thyme, salt and pepper and slowly add enough water until a smooth dough forms.
Roll into walnut sized balls.
Add to the stew turn the heat to high and cook for 45min or until light and fluffy.
