Mini Vegan Chilli Taco
Party time wow your vegan guests with our Mini Vegan Chilli Taco.  Everyone will love them and they are a super budget friendly canape. For this recipe you will need a vegan chilli we recommend you use The Greedy Fox Vegan Chilli
You can make the chilli the day before, making this a super quick and easy canape to put together. Its also brilliant to use your leftover chilli, no-on will believe that you have created something so tasty and elegant with leftovers. Don’t be put off by these if you’re not vegan, once we started making this chilli we never went back to a meat one!

Ingredients

Tortillas. 1 large tortilla should make at least 6 mini tacos.
Vegan chilli
1-2Tsp The Greedy Fox Mexican Seasoning
Guacamole
Dairy free Yogurt

Method

Pre heat oven 180deg
Using a 3inch cookie cutter cut the tortilla into smaller tortillas you should get 6/7 from each big tortilla.

Leftover Christmas Quesadilla by The Greedy Fox

Quesadilla

Our Leftover Christmas Quesadilla are a quick and easy way to use Christmas leftovers, turkey, cranberry sauce, cheese from the cheese board. Don’t be scared to  mix this up a bit…the possibilities are endless. This is a staple Monday night tea in our house with all the roast dinner leftovers.

Ingredients

8 Soft Tortillas
Cranberry sauce
350 g leftover turkey
Cheeses left over from the cheese board. We like using brie/camembert or just cheddar.
80g Chorizo
The Greedy Fox Cajun/Mediterranean seasoning

Method

Lie 4 Tortillas out and spread each with some cranberry sauce then top with the leftover turkey and chorizo.
Finely slice or grate the cheese and scatter over the turkey and chorizo.
Season to taste with the greedy fox Cajun/Mediterranean seasoning
Top each with another tortilla and dry fry each tortilla for 2-3 mins or until crisp and golden.
Turn out onto a chopping board and slice into wedges.

Leftover Turkey Pie by The Greedy Fox

Turkey Pie

Everybody loves a pie so what better way to use up leftover Christmas meat than our Leftover Turkey Pie. You can literally add whatever you have left, even popping some leftover veg in this works well. As you know we are all about making the most of what we have, with food an life and this is just another perfect example of a budget friendly, resourceful, family recipe.

Ingredients
350g leftover turkey
500ml Leftover Turkey Gravy
Chestnut Mushrooms
The Greedy Fox Burger and Steak Seasoning
Leftover peas/frozen peas
1 pack puff pastry
Method
Pre heat oven to 180 deg
Fry the mushrooms in the oil over a medium heat with The Greedy Fox Burger and Steak seasoning
for 4mins.
Add the turkey and gravy cook for another 5 mins.
Pour Turkey mixture into a pie dish and top with the pastry crimp the edges with the back of a fork and cut a small slit in the to to let some steam out.
Brush with egg and bake for 45mins or until golden.

Roast Sprouts with Halloumi and Bacon by The Greedy Fox

Roast Sprouts with Halloumi

Our Roast Sprouts with Halloumi are a brilliant way to use up leftover sprouts and make an excellent side dish. We loooooooove halloumi in this house! I think we are a 50/50 split on the love of sprouts but add a bit of our Mexican or Cajun Seasoning and sprouts definitely more of a hit!

Ingredients

Sprouts sliced in half
Bacon cut into lardons
Halloumi cut into bitesize chunks
The Greedy Fox Cajun/Mexican Seasoning
1tbsp Rape seed oil.

Method

Pre Heat oven 200 deg
Mix the sprouts, bacon and halloumi in a bowl and drizzle with the rape seed oil.
Season with The Greedy Fox Seasoning tip out onto a roasting dish and roast for 20-25 mins or until slightly charred.
