Sweet and Sour Veggies is one of our favourite takeaways, we think this recipes takes it to a new level. Super quick and simple it’ll be ready before it would’ve been delivered.
For the sauce.
300g Tomato Ketchup
100g Malt Vinegar
1/2 Onion roughly chopped
1 tsp Garlic
1 Tsp Ginger
100g Light soft brown sugar
2Tbsp soy sauce/ Gluten Free alternative
Pineapple chunks [from a tin]
25ml Pineapple Juice [saved from the above tin]
A large handful of each…..
Green Beans, chopped into bitesize pieces
Cauliflower, broken into bite size florets.
Mini sweetcorn. Larger ones halved lengthways.
1 Tsp The Greedy Fox 5 spice
For the sauce
Fry the onion over a medium heat in a large heavy bottomed saucepan for 5 mins until soft.
Add the garlic and ginger and cook for 1 min.
Combine all the rest of the Sweet and Sour sauce ingredients with the onion and garlic and bring to a boil, reduce the heat immediately and simmer 10-15 mins until thick and syrupy.
While the sauce is simmering stir fry the veg in The Greedy Fox 5 spice for 4-5 mins until soft.
Taste and season with a little salt.
Add the veggies to sauce and carefully stir so everything is well coated.
Serve this Sweet and Sour Veggie while hot over boiled rice.
