The Greedy Fox Moroccan Chicken Gyros

A healthy kebab recipe? Really? Yes really! These Moroccan Chicken Gyros are like a ‘dirty’ kebab without the calories! We make this recipe at least once a week and very often will make these on a Saturday and when we get home from a night out just pop them straight under the grill for the perfect beer munch(ok so often is a stretch, we are parents of two young children so our Saturday ‘nights out’ are few and far between!). When we first started making these we used to get the butcher to bone our chicken thighs, now they are readily available in supermarkets already butchered.

These are also a brilliant stow shopper for a BBQ, they look so impressive when you just slice the meat off and pop it in a pitta bread. Once you’ve tried these you will always opt for the healthy kebab recipe and theres no risk of adding spicy spuds to your order at the kebab shop!

Serves 4

Ingredients

Chicken Gyros

8 Boneless chicken thighs, ask your butcher to do this or some supermarkets are starting to sell them now

1-2 Tbsp The Greedy Fox Moroccan Seasoning

Pitta Bread

Lemon wedges

Harissa yogurt

2 Tbsp Yogurt

1 Tsp Harissa

 

Salad

1/4 Iceberg lettuce

1/2 Red Onion

1 Tbsp Parsley

 

Method

Pre heat grill med/high

If you are using wooden kebab sticks, soak for 30 mins prior to using.

Season chicken thighs with 1-2 tbsp The Greedy Fox Moroccan seasoning

Skewer on 2 kebab sticks 1 at each end of the thigh leave a little space and load another thigh until all the meat is gone. 4 thighs per 2 Kebab sticks

Cook for 20-25 mins until cooked all the way through, turning every 5 minuted or so and basting with the juices as you go.

Meanwhile make the Harissa yogurt and the salad.

Mix 2tbsp Yogurt with 1 tsp Harissa.

Salad

Finely chop the lettuce and red onion. Mix together in a large bowl with the parsley.

To serve.

Chop the chicken thighs in half to make 4 kebabs load your pitta bread with the chicken breast, salad and Harissa yogurt and enjoy.
