Homemade Red Thai Curry Paste creates tastier curries, and is a lot healthier and is perfect for veggies, sea food and meat, even add a dollop to soups and stews for an extra flavour boost.

Ingredients

1 Tbsp The Greedy Fox Thai 7 Spice

2 Sticks LemonGrass tough outer leaves removed and the rest finely chopped

1 tsp ginger

5 or more red or green birds eye chilli

1 tsp garlic

Small bunch coriander, stalks only

1tbsp soy sauce

50ml oil/ For a healthier paste use reduced fat coconut milk instead of oil.

1 tsp fish sauce

1 Tbsp Tomato puree [optional]

Juice of 1 lime

Method

Add all ingredients to a food processor or blender and process well add a little more oil if to thick, it will taste very potent at this point but will mellow when cooked with all the curry ingredients.
