The Greedy Fox Rainbow Salad

So Rainbow Salad…we all know salad is a great diet food, low fat, full of nutrients etc but let’s be fair we eat with our eyes so they key to a good fulfilling salad is making it look amazing. With that in mind check out our Rainbow Salad! Using things like butterbeans in a salad will really up the protein and keep you fuller for longer. We have used Candied Beetroot because we were lucky enough to come across some but any beetroot will do. With that in mind just use this recipe as a guide but remember whatever you add to it its all about the colour!

Ingredients

A Medium sweet potato chopped into bite size chunks

1 tsp The Greedy Fox Cajun Seasoning 

3 candied beetroot or any you can find

2tsp oil or a couple sprays fry light

1tbsp lemon juice

1tbsp sherry vinegar

1 clove garlic crushed

1 tin butterbeans

2 tbsp dried thyme

5 roughly chopped cherry toms or 2 normal sized

A handful spinach

Method

Pre-heat oven 200 degrees

Peel and quarter the beetroot [you may want to wear gloves]

Place in a roasting tray add 1 tsp of the oil or a spray fry light, 1 tbsp dried thyme,vinegar and salt and pepper, Toss to combine all the flavours.

Bake in the oven for 45-55 mins or until tender.

Use the other tsp oil/fry light to coat the sweet pots when coated add The Greedy Fox Cajun seasoning, toss to coat.

Bake for 20-30 mins

Add the butter beans, lemon juice, crushed garlic, 1 tbsp dried thyme with a tbsp water into saucepan and heat through. Set aside.

Now on a plate create your own rainbow of colours.

Above we started with our Cajun sweet potatoes next up was our delicious roasted beets, then the lovely lemony butter beans our home grown tomatoes came up next and we finished with a gert handful of spinach.
