Malaysian Satay

Chicken Satay has always been a favourite in our house. When I was a child my Dad used to cook this for us. He worked in Malaysia a lot and used to bring back these little amazing packets of seasoning that you just couldn’t buy in this country back then. This is the ultimate in street food in 2020.

Its taken us a long time to develop this one as we wanted to get it just right and we really feel like we have! The sauce is nutty but fresh and its one of our go to recipes for parties! Especially BBQ’s, when you char that chicken on the BBQ it only adds to the amazing flavour, in the winter we just make the most of our griddle. No matter what the season, there is always Chicken Satay in the Fox house!!!! Sometimes we make it with pork, it just depends on whats in the freezer, or whats on offer!!!

We use peanut butter in this recipe, now a little but of choice comes in here! We love the texture of a rough peanut butter, with chunky peanuts but our kids prefer this when we use the smooth peanut butter. Either is good it just depends on your texture preference.

Katsu Curry

Katsu Curry has really made an impact on the world in 2019 and is one of the trendiest street food there is! a real food trend of this year. Normally always served as a sauce with breaded chicken we can see why this has been a firm feature of last year and is set to be the same for 2020.

You would be forgiven for thinking that Katsu Curry is an Indian dish but its actually a Japanese dish which is why its not served like your traditional curry. In this recipe we use Panko breadcrumbs but give you a fun alternative of rice krispies. As you may already know, we have a Coeliac daughter so we are always adapting recipes and rice krispies work brilliantly. Gyros

A healthy chicken kebab recipe? Really? Yes really! These Moroccan Chicken Gyros are like a ‘dirty’ kebab without the calories! The ultimate Fakeaway! We make this recipe at least once a week and very often will make these on a Saturday and when we get home from a night out just pop them straight under the grill for the perfect beer munch(ok so often is a stretch, we are parents of two young children so our Saturday ‘nights out’ are few and far between!). When we first started making these we used to get the butcher to bone our chicken thighs, now they are readily available in supermarkets already butchered.

These are also a brilliant stow shopper for a BBQ, they look so impressive when you just slice the meat off and pop it in a pitta bread. Once you’ve tried these you will always opt for the healthy kebab recipe and theres no risk of adding spicy spuds to your order at the kebab shop! Herby Style Chicken

We love this meal, its basically a bit more of a grown up version of our Southern Style Chicken (we are all partial to a pinching a chicken nugget off our kids plates but we all know its not really a grown up meal!) With a bit more of a kick and a few more herbs  but still a delicious Fakeaway chicken recipe and again is so simple to make. Its perfect for those on slimming plans who don’t want to cook a separate meal for everyone else in the family!

We love to have this one on a Saturday night, with the kids all of us round the table, with some Greedy Fox chips, just diving in! We used to do this with a KFC years ago but now we have these instead. Our daughter is coeliac so fakeaways are our new takeaways! This is cheaper and much healthier. Plus we often get the kids to make them (no child labour just teaching them) and because it is so simple they love the fact that they can eat what they have cooked!
