Slow Cooker Sausage Casserole
Mediterranean Sausage Casserole is a childhood memory in a bowl. Growing up its a smell I remember filling the house on those cold rainy nights through winter. This recipe easily fills 2 of your 5 a day and if you use lower fat sausages it is even healthier.
We have always found that whenever you use any meat in a casserole browning the meat first stops everything merging into one texture. Aesthetically too sausages look much more appealing in a slow cooker casserole once they’ve been browned. We love this recipe to sneak more veg into our kids meals, apparently vegetables are much more appealing when they are covered in any sort of sauce!
Our Slow Cooker Sausage Casserole is another one of those busy day, winning recipes and is a real budget meal too. You know the type of day when as a mum you need to be in 5 places at once and you’re still expected to actually feed the kids! We’ve made a slimming version of this meal and actually prefer it with reduced fat sausages. But its also great with a good old fashioned butchers sausage. It’s also one of those meals that is even better the next day so we always make enough to cover lunch too.
