Mexican Slow Cooker Beef

Calling all Taco lovers our Mexican Slow Cooker Beef is a recipe the whole family will enjoy. You can serve as a  taco or a simple meal with rice. It is essentially Mexican Shredded beef. This easy recipe is one of the reasons we love our slow cooker, beef cooked slowly remains juicy and melts in your mouth.

We regularly cook this on a Sunday and it leaves plenty of leftovers for Monday Nachos! This consists of a super cheap pack of tortilla chips (we buy 47p ones!), spooning the mixture on top and then shredding some mozorella over it and popping it in the oven for 10mins. So for an extra £1 you get a whole new meal and we are all about making the most of leftovers. Feeding a family of 4 in these times it’s essential you make the most of leftovers. And to be honest very often they are the best meals!
