Slow Cooker Caribbean Chicken Super flavourful and Super Easy. Add some spice to your Sunday lunch by marinating the chicken, then use the juices to create a coconut gravy to either add the meat back to or serve over.
This slow cooker meal is delicious. The coconut gravy was one of those things we created accidentally but elevates this dish. You can serve it in a bowl as a family family or remove the chicken, carve and plate and then pour over the gravy for something a bit posher! Once you make this recipe it will become one of your go to staple meals.
We call this our alternative roast on a Sunday and still serve with some veg and definitely roasties, (theres always a reason to have roasties!)
If you want to make it lower fat just use reduced fat coconut milk, it doesn’t deter from the flavour at all.
