Scotch eggs are a naughty treat..right…wrong, we show you how to make low fat scotch eggs to bring that little bit of naughtiness into your life without the calories!
Makes 5 Scotch Eggs
5oog turkey mince
5 Medium free range eggs
1tbsp The Greedy Fox Seasoning. BBQ,Cajun,Mediteranean
Panko Breadcrumbs or 3 slices of day old wholemeal bread blended into breadcrumbs
2 eggs, beaten.
Preheat oven 190 degree
Bring a large pan of water to a boil, carefully add the eggs and boil for 5 mins.
After the 5 mins remove straight from the pan and place straight into iced cold water. Leave to cool.
Season the Turkey mince with your choice of Greedy Fox Seasoning and split into 5 equal balls. Or split into 5 five balls and season all 5 differently.
Set up two bowls 1 for the beaten egg and 1 for the breadcrumbs.
Peel the eggs.
Cut a square of cling film roughly the size of a small plate.
Add a ball of the The Greedy Fox Seasoned turkey mince to the cling film and flatten, put the egg in the centre and bring the corners of the cling film together to seal the meat around the egg.
Once sealed dip in the beaten egg then roll in the breadcrumbs.
Place onto a baking tray lined with baking paper.
Bake in the oven for 25 mins.
