Mexican Pulled Pork or Taco de Carnitas are made using our slow cooker it is a wonderfully simple meal packed full of Mexican flavour. Serve with salsa, salad, soured cream and your favourite hot sauce to make the most delicious tacos.
1.5 kg Pork Shoulder.
250ml Good Quality Chicken Stock
Juice 1 Orange
White Onion, Sliced
1 Tsp Chopped Garlic, we use a lazy variety
Coriander, roughly chopped
1 Tsp oil
Remove the fat from the pork [Makes great Crackling]
Season the pork with salt and sear on all sides in a hot frying pan with the oil
Add the chicken stock, onion, Orange juice and The Greedy Fox Mexican Seasoning to the slow cooker and stir to combine.
Place the pork on top of onion mixture, cover with the lid and cook on low for 8hrs.
Remove pork from slow cooker and using 2 forks shred the meat.
Working in batches fry the pork for a few minutes in a dry frying pan to give you crispy edges [this stage is entirely optional]
More Importantly The Greedy Fox Mexican Pulled pork is perfect served as taco filler or with rice.
