This Mexican Potato and Cabbage soup is a wonderful blend of veg and floury potatoes and The Greedy Fox Mexican Seasoning. Topped with crispy Bacon and served with your favourite crusty bread it’s a wholesome lunch.
1 onion Roughly Chopped
2 Carrot, Chopped
2 sticks of Celery, Chopped
500g Potato, Peeled and chopped
1 ltr good quality Veg or Chicken Stock
150g Bacon Lardons or 8 rashers of streaky bacon
200g Savoy Cabbage
Heat a large saucepan over a med/high heat add the oil and saute the veg [not the cabbage] for 5 mins until starting to soften.
Add The Greedy Fox Mexican seasoning, stir well to coat all the veg.
Carefully tip in the stock and simmer until all the veg is soft.
Meanwhile cook the bacon until crispy, or cooked to your liking.
Blend the soup until smooth, add the Savoy cabbage and simmer until soft. Around 5mins.
Serve this Mexican potato and cabbage soup in bowls topped the crispy bacon and crusty bread on the side for dipping.
