We developed this Mediterranean Tomato Chutney Recipe when we had a taster day at Langage Farm they had a new range of delicious Chunks Pies (if you are Devon based check both of these fab companies out) It’s really nice sweet chutney that will accompany cheese really well, actually it accompanies pretty much anything really well! Its simple and delicious, the best tomato chutney recipe you’ll find.
We always make a nice batch of this over Christmas, its perfect to accompany the cold meat spreads and leftovers cheese board you inevitably get at Christmas.
1kg Tomatoes roughly chopped
500g Onions diced
2 small courgettes Finley sliced
1 Red pepper diced
1-2Tbsp The Greedy Fox Mediterranean seasoning
200ml Apple Cider vinegar
150g caster sugar
Add the tomatoes, onions courgette and The Greedy fox Mediterranean seasoning to a heavy bottomed saucepan bring to the boil the reduce the heat an simmer for 1 1/2 hours. Or until the juice from the tomatoes has evaporated.
Stir in the vinegar and sugar and simmer for another hour or until the vinegar has evaporated.
Ladle into sterilised jars to keep refrigerated, we always use kilner jars or jam jars to keep the air out and keep it fresher for longer.
