Coleslaw is one of those side dishes that is mandatory at any BBQ or with any summer meal actually. However it is also one of those dishes that piles the calories onto your meal without you even realising. You know the score, you think your being super healthy with a chicken breast and veg kebab and some new potatoes, then you add some coleslaw which can’t be that bad because its basically veg right? 1/2 Savoy cabbage, stalk removed and leaves thinly sliced
1 Thinly sliced small red onion
1/2 Thinly sliced red pepper
1 Carrot grated
1/2 Thinly sliced yellow pepper
100ml KoKo dairy free yogurt
1/4 tsp crushed garlic
salt and pepper to taste
1 -2 Tsp The Greedy Fox BBQ Seasoning
Put all the veg in a bowl and mix well.
Add the garlic to the yogurt and season to taste.
Mix the yogurt dressing into the veg until everything is well coated.
Season the top of the slaw with The Greedy Fox BBQ seasoning.
