Jerk Aioli is a taste sensation. Once you’ve made your own mayo you will never want to eat shop bought mayo again, although here we use a blender this recipe is is easily made with a bit of elbow grease and a balloon whisk.
Thick creamy and luxurious this exotic Caribbean inspired mayonnaise is a perfect condiment for all occasions mmmm……….
3 Large free range egg yolks
1 Tbsp The Greedy Fox Caribbean seasoning
1\2 clove garlic
1 tsp Dijon mustard
1/2 lime, juice only
Rape seed oil
Add the egg yolks and mustard, garlic and The Greedy Fox Caribbean seasoning into a blender with the blade attachment, set to a medium setting and turn on, in a SLOW steady stream gradually pour in the oil and blend until the mayonnaise it is thick and creamy. Add the lime juice and season with sea salt to taste.
