Indian Goan Fried Potatoes by The Greedy Fox

The Greedy Fox Indian Goan Fried Potatoes are the perfect side dish to make with leftover roasties, mix them with our Goan seasoning for a perfect side dish for any Indian meal. They are sort of our version of Bombay Potatoes (but better obviously!) A very cheap, very simple dish that will spice up your potatoes.
Ingredients
500g White potatoes, peeled and chopped into bitesize pieces.
1 Tbsp The Greedy Fox Goan Seasoning.
1/2 White onion, Sliced.
1 Tsp Garlic [We use lazy]
4 Tomatoes, Quartered.
1 Tsp Ginger [We use lazy]
Chopped Coriander.
1 Tbsp Oil or your low fat alternative.
Method
Bring a large pan of salted water to a boil and carefully add the potatoes. Boil until soft [Around 6 mins]
Drain Potatoes
Not including the coriander and the oil, add all the other ingredients to a large bowl and mix well being careful not to break up the potatoes to much.
Heat the oil in a large frying pan over a medium/high heat fry the potatoes until crispy and golden. Don’t overcrowd the the frying pan work in batches if you need to.
These also work brilliantly with leftover roast potatoes.
Serve the Indian Goan fried potatoes while hot.
