Goan Crab Cakes by The Greedy Fox

We first tested these Goan Crab Cakes when we had some builders around doing some work in our house and they disappeared in minutes! (The crab cakes not the builders!) The key with cooking with any seafood is not to overpower the delicate flavour of the fish. We wanted to enhance the flavour of the crab, not make it disappear and our Goan Seasoning is perfect for that. You can devour this as a starter for 4 or a main meal for two. Ingredients

1oog White Crab meat

1Tbsp The Greedy Fox Goan Seasoning

1/2 Red onion finely diced

250g Boiled Potato lightly mashed

1Tsp Ginger [we use lazy]

2-3Tbsp Coconut milk

1/2 Green Chilli deseeded and finely diced [optional]

1/2 lime, juice only

Small handful coriander roughly chopped

salt and pepper to taste

Method

Saute onion in ginger and The Greedy Fox Goan seasoning until soft. Set aside and leave to completely cool.

Mix the coriander and chilli [if using] to the onion mix.

Add the potato, coconut milk and lime juice to the onion mix. Thoroughly mix but don’t over mash the potato.

Gently mix the crab through the potato/onion mix.

Form the mix into equal sized patties, you should make around 8 50g patties.

Leave in the fridge for 30mins to set.

Fry in a little oil for 7-10 mins flipping halfway or bake in a preheated oven @200 for 10-15mins turning half way.

Perfect with pickled veg or even a light salad and chip and of course a gert dry cider.
