Goan Chicken Satay by The Greedy Fox

Our Goan Chicken satay recipe is our take on the popular asian starter. A sort of Indian kebab with a coconut and peanut sauce this will make an excellent starter for a special dinner party or even a excellent family tea
Ingredients
For the Chicken Satay
2 Chicken Breast sliced into long strips
1 Tbsp The Greedy Fox Goan Seasoning
100ml Coconut Milk
1 Tbsp Crunchy Peanut Butter
juice 1/2 lime
1 Tbsp Soy Sauce
Honey to taste
Satay Sauce
1 Tbsp Crunchy Peanut Butter
300ml Coconut milk
1 Tbsp The Greedy Fox Goan Seasoning
1 Tbsp Gluten Free Plain Flour [normal flour will work just as well]
1/2 White onion finely sliced
1 Tbsp Soy Sauce
Juice 1/2 Lime
1 Tbsp Honey
Oil
Method
For the Chicken
Add all the ingredients except the chicken to a bowl mix well and taste, add a little more soy sauce if spud like it saltier.
Put the Chicken into the marinade, and place in the fridge for 1 hr preferably over night.
Remove from the fridge and grill under a hot grill 5mins each side or until cooked through
For the sauce
Over a medium heated in a heavy based saucepan fry the onion until soft [around 5 mins]
Stir in The Greedy Fox Goan Seasoning, and cook for a min
next stir through the crunchy peanut butter and the flour [it will look like a lumpy mess at this point]
Add the coconut milk, soy, honey and lime juice mix well and taste.
Adjust the seasoning to your taste.
Cook for 5 mins until you reach your desired thickness.
The Greedy Fox Goan Satay is brilliant served served on its own with the sauce as a started or try serving with boil rice for a fragrant main dish.
