Chargrilled Avocado on Toast with Huevos Rancheros
This Chargrilled Avocado on Toast with Huevos Rancheros is a hearty breakfast that will set you up for the day easily doubled for a family breakfast feast. We always make too much of The Greedy Fox Huevos Rancheros so this is normally a Sunday breakfast for us. We love griddled avocado, in fact we just love avocado as its so versatile and packed with goodness. If you don’t fancy it griddled then just smash it! The lime juice really lifts this recipe.
2 Portion The Greedy Fox Huevos Rancheros
1 Avocado. Peeled, Stoned and sliced.
4 Slices of you favourite bread or your own alternative.
1 tbsp lime juice
2 tsp olive oil [optional]
Heat a griddle pan until it’s smoking.
Brush the avocado slices with half the oil if using, season with the lime juice and a little sea salt.
Lay the Avocados on the griddle for a minute then turn until nice chargrilled lines are visible on the flesh. Set a side to cool slightly.
Heat the Ranchos Huevos, make a well and carefully drop the eggs in.
Brush the slices of your favourite bread with the rest of the oil if using and place on the griddle, until nicely chargrilled and turn.
With a fork roughly mash the Avocado and spread on a slice of toast.
Add the Huevos Rancheros then the egg.
