Caribbean Enchiladas with a Sweet & Spicy Caribbean Sauce by The Greedy Fox
Caribbean Enchiladas with a Sweet & Spicy Sauce is our twist on traditional Mexican Enchiladas. This sweet, sticky caribbean sauce will have you wandering what else you could use the sauce for, and thats the beauty of The Greedy Fox, it lets you experiment and discover your own new recipes.This is a recipe that takes a little longer but its worth the effort and once its prepared you can pop in the oven anytime. It’s also a great leftover recipe. Here we have used the leftover jerk chicken (to be honest we purposely cook extra so we have leftovers as it doesn’t last long at family meal times!)
Ingredients
For the Enchiladas.
1 portion The Greedy Fox Caribbean Chicken, Meat pulled off the bone. Or use 500g leftover chicken shredded with 1 Tbsp The Greedy Fox Caribbean seasoning
Jerk Chicken
1/2 Roasted Red Pepper thinly sliced
5/6 Spring Onions sliced
3-4 Your favourite Wraps
A handful fresh chopped coriander- Garnish
For the Sweet and Spicy Caribbean sauce
1Tbsp Soy
200g passata
1Tbsp Soy
1Tbsp The Greedy Fox Caribbean Seasoning
2Tbsp Ketchup
Franks hot sauce, use little or as much as you can handle.
1Tbsp Brown sugar
Method
Pre heat oven 190 degree
Sweet and Spicy Caribbean sauce
Put all the sauce ingredients for the sauce into a heavy bottomed saucepan whisk together and simmer until thick.
Enchiladas
While the sauce is simmering add the chicken, red pepper, and spring onions to a bowl and mix well.
Fill each wrap with a third of the mix and roll place into a snug fitting oven dish and top with the sauce.
Bake for 20 mins.
Serve the Caribbean Enchiladas with a Sweet & Spicy Sauce with a crunchy green leaf salad.
