Cajun Beetroot Hummus is one of the most beautiful recipes we create. All thanks to the star ingredient, the beetroot. This is a fantastic dip for a party because it looks like such a show stopper, its also packed full of goodness.
1x400g tin chickpea drained but reserve the liquid
200gr Grated Beetroot
1tsp Crushed sea salt
2tbsp lime juice
1-2tsp The Greedy Cajun seasoning
Fresh Parsley leaves
Drain the chickpeas and reserve the liquid,Rinse the chickpeas in cold water and tip into your food processor with the salt lime juice, The Greedy Fox Cajun Seasoning and 4 tbsp of reserved liquid.
Turn the food processor on and while its running slowly adding the rest of the water.
When the hummus is as smooth as you want it, tip it out into a serving dish, decorate with a few reserved chickpeas and a little sprinkle more of The Greedy Fox Cajun seasoning and the parsley leaves.
