The Greedy Fox Butternut Squash Chips
When Mrs Fox first started her Slimming World diet these Butternut Squash Chips became a firm fixture in our house and they’ve never really left. A brilliant alternative to potatoes, butternut squash has a real versatility and adds a bit of variety onto the plate. Sometimes we make them into chips, sometimes we cube them. The fact that they are so versatile means that we add whatever seasoning we fancy (generally depends on what else we are cooking).
1 Butternut squash washed and deseeded, cut into finger sized chips.
1tsp oil or your low fat alternative.
Preheat oven 200 degree
In a bowl large enough for the chips toss them in the oil and season with The Greedy Fox Seasoning of your choice.
Place in a single layer on a baking tray and cook for 30-40mins or until cooked through and crispy.
Serve while still warm.
