This Baked Eggs with mushroom and chorizo recipe is one of those recipes where the quantity of ingredients are based on the amount of people you are cooking for, here we are only cooking for 1. Get creative and use up any leftovers in your fridge, Smoked salmon, Ham and Eggs even sausage and bacon are a few of our regular concoctions.
A handful of fresh spinach
100 gram chorizo peeled and roughly chopped
We used a pack of dried porcini mushroom, but any thickly sliced mushroom will be just as good.
1 large free range egg
salt and pepper to taste
1 Tsp of The Greedy Fox seasoning of your choice
Pre-heat oven to 180 degree
Grease your oven dish with fry light.
Build your bowl starting with the spinach next add the mushroom then the chorizo make a well in the centre and crack in the egg bake for 8-10 minutes until whites are set and yolks are still runny/or cooked to your liking.
Baked Eggs with Mushroom and Chorizo are perfect served with griddled toast and your favourite morning beverage.
