In our very first series of Blogs we will be zooming in on each of our flavours, how they are made, where the originate from and some of our favourite recipes we use them for. At The Greedy Fox we are all about good, wholesome family meals and are always conscious of a family food budget. There is nothing more satisfying than eating together as a family. Our recipes are designed to enable this. This week we look at some easy Mexican recipes.
Our first blog in our Flavour Focus series discusses the delights of our Mexican Seasoning. Mexican food dates back around 9,000 years but in recent years has become a real staple in peoples diets. With Mexican Street Food popping up all over the place and big name chains such as Chiquitos, Las Igunas coming to the UK. Mexican food is now a common family meal, here is how to bring it into your family home with easy Mexican recipes.

Our kids favourite family meal has always been Fajitas and we find by adopting that ‘sharing’ tea where everything is put on the table and we all dive in is a sure fire way to get our kids to eat more and most importantly for us as parents, talk more.
I can’t begin to tell you what a difference eating like this makes to our family relationships. Sitting like this means we have time to ask our teenage daughter ‘what the beef was’ in school today. (apparently this is teenage code for gossip!) Or to ask our 7 year old what his favourite part of the day was. For that 30 minutes or so we all have a captive audience and so do they. We even have a recipe for Slow Cooker Fajitas, ready for a family tea after a busy day, just another easy Mexican recipe.
So what makes up our amazing Mexican seasoning? A secret, unique blend of garlic, cumin, our special paprika blend, sea salt, coriander, onion, black pepper, chilli and oregano.
The cornerstones of Mexican food are corn, beans, squash, chia, chilli, sweet potato, avocados and tomatoes. Interestingly the addition of meat into Mexican food came much later after the Spanish conquest. This may be why Mexican food lends itself so well to Vegan recipes.
One of our original and still most popular recipes is our budget friendly, easy Mexican recipe for Chilli. Why is this one is so popular? Firstly its super cheap to make, it costs around £2-£2.50 and serves 6, you can’t get much better than that. Secondly it is naturally vegan (now don’t stop reading if that scares you! We had never eaten lentils before this recipe and now we are converted) so it suits everyone. Thirdly its a one pot meal and that means you chuck it all in and voila! Its a real hit with the family, the kids look forward to the next day when we use the leftovers on a cheap packet of Morrisons tortilla chips! Cheap as chips, literally!
Our next most popular recipe is definitely our Mexican Slow Cooked Barbacoa Beef, I think this one is such a hit because every cook in the family loves one of the meals that you can just cook in the slow cooker and is ready when you get home! Our son plays a lot of football (we are saying this as we are preparing to take him for the 3rd time this week and its only Tuesday!!!) so we cook this one a lot. Talking of family here they are!
Another big plus with this Mexican recipe is that the kids love it, because its not a meal thats put on a plate, it’s one of those meals that goes in the middle of the table and we all dive in. Add some sour cream, cheese, refried beans, tacos (we use both soft and shell tacos for this) and you have yourself a real Mexican family meal with total ease!
