Mexican Refried Beans by The Greedy Fox
Before we began cutting out processed food we would always buy refried beans in a tin, but after we first made these Mexican Refried Beans we have never looked back. The reason this delicious recipe is so much better than a tin is that generally the tins only contain pinto beans, water, oil and onion powder. This is why this recipe has so much flavour. Its made with The Greedy Fox Mexican Seasoning, which is a blend of garlic, cumin, our special paprika blend, sea salt, coriander, onion, black pepper, chilli and oregano.
Any Mexican dish you make will be elevated with this side dish.
1 Small white onion, roughly diced
1 Tin Black Pinto or Adnuki beans
1-2 tsp The Greedy Fox Mexican Seasoning
1 Bay Leaf
1 Veg stock cube
Chopped chilli [optional]
1-2 Tsp oil
Saute the onion in the oil over a medium heat until the onion is translucent, add The Greedy Fox Mexican Seasoning and the bay leaf and the chilli if using, continue cooking for a min or two until the spices release their aroma.
Tip in the beans and their juices add the stock cube, simmer over a medium heat for 15mins stirring occasionally until the beans have absorbed all the juices and look thick and stodgy.
Garnish with more chilli. [optional]
