Mexican Chorizo by The Greedy Fox
This Mexican Chorizo recipe is probably not the chorizo you think of but its just the perfect budget recipe. This recipe makes 2 portions for 2 people so we always freeze one and then we’ve always got an easy dinner on hand when we are in a rush. Its perfect in tacos, burritos or even with scrambled eggs for a hearty breakfast.
5oog Pork Mince
1/2 Finely Chopped Onion
1/4 Tsp Chopped Garlic, we use lazy
1/4 Tsp Chopped Ginger, we use lazy
1 Tbsp Smoked Paprika [Available on request]
Finely Chopped red chilli [optional] use as much little as you like.
1 Tsp oil or your low fat alternative
To Make the chorizo
In a large bowl mix all the chorizo ingredients until well combined divide into 2 equal pieces and roll out into two sausages. Alternatively make into burgers for a fantastic Mexican chorizo burger.
Unroll a large piece of cling film and roll each chorizo sausage tight continue with the other. Best leftover night in the fridge to let the flavours mature.
Add a little oil to a hot frying pan, carefully place the chorizo and chilli [if using] in the pan and break up continue to fry until cooked through and crispy around 8mins.
Amazing served in soft tacos with a little salad and The Greedy Fox Guacamole
