Our Mexican Black Bean and Walnut Taco is another epic Vegan creation from The Greedy Fox. The walnuts give it a fantastic texture. The biggest challenge with this dish is making it look attractive! Do not be alarmed when your mixture is a but of a funny brown colour. Once you take your first mouthful this will all be forgotten!
100 gram walnut halves
1 Tin black beans, drained. Around 400gram
50 gram sun-dried tomato
1/2 Lime, juice only
1/2 Clove of Garlic
Salt and Pepper
A few mixed salad leaves
1 pack of soft small tacos [wraps]
1 avocado, skinned and seasoned with lime juice and salt.
Dairy Free Yogurt or your own alternative, optional.
Chilli Sauce. optional.
Add the first five ingredients to blender or food processor and blend until similar to ground meat consistency or to your liking. Season to taste
Heat tacos for 20 secs each side over a very hot dry frying pan/griddle
Add the filling to tacos starting with the lettuce, then the black bean mix, finishing with the rest of the salad and sealing with the yogurt and chilli sauce if using.
We serve these with brown rice and/or potato wedges
