We have to admit we have made a few guacamole haters try this and they have been totally converted. We very often make it without the oil and it is just as good. Traditionally tis dish is quite high in fat but this one isn’t, of course Avocado is full of fatty oils but they are good fats and incredibly good for your body.
Serves 4 as a side
Cost Per Portion:£0.39
1 Avocado, flesh scooped out and skin discarded
1/2 small red onion finely diced
1 Tomato deseeded and diced
A little red chilli deseeded and diced. Use as much as you can handle or none at all.
1/4 lime, juice only.
Handful chopped coriander
Sea salt and black pepper to taste
1 Tsp rape seed oil [optional]
On a chopping board, add the avocado,red onion,tomato,garlic and chilli if using and chop until its all combined. The more you chop the thinner the guacamole will become so if you like it chunkier don’t chop as long. When well combined add to a clean bowl add the lime juice, rape seed oil [if using] and coriander mix well again and season to taste.
A perfect side dish for your Mexican dish or used as a dip for your nachos
