Love Jerk? Love Prawns? Then you’ll love these Jerk Prawns and Mango Salsa by The Greedy Fox. Nothing sings summer to us more than BBQ and shellfish and here we can combine the two although this recipe can be made indoors using your grill
This recipe is designed for 2 as light lunch or starter
8 Large uncooked Prawns if the shell is still on Peel and deveined
2 Tsp The greedy Fox caribbean seasoning
2 Tsp water
A Mango, peeled and finely diced
1 Avocado, finely diced
1/2 small red onion finely diced
1/2 Red bell pepper finely chopped
75 gr cooked sweetcorn, cooled.
2 tablespoons chopped fresh coriander
1 tablespoon fresh lime juice
1/4 teaspoon salt
Mix The Greedy Fox Caribbean seasoning with the water to make a paste mix in a bowl, Add the prawns and carefully toss to coat.
Next add all the salsa ingredients to a separate bowl large to mix it all, mix and season to perfection.
Grill shrimp under a high heat in the grill for 2-3 mins on each side or until cooked through and pink,or grill straight over hot coals until pink and cooked through
Perfect served with The Greedy Fox Jerk Aioli, a bruschetta and an ice cold beer.
