Guacamole is a simple but beautiful thing and this Guacamole recipe is no different. Brilliantly fresh and vibrant the Colours alone will make you want to tuck in. Vibrant and zingy a perfect accompaniment to any feast.
Avocados are unusual among fruits because they are high in fat. This means they contain a higher amount of energy (calories) than other fruits and vegetables. At around 150kcal per half an avocado, compared with around 20kcal for a similar amount of broccoli or a small orange, their energy contribution must be taken into consideration if you are trying to reduce your weight.
This doesn’t mean you should give them up, but if you want to eat avocado regularly, you will have to think about the rest of your diet a bit more carefully. Compared with other high-fat foods, avocados are a healthy option.

1 Avocado, flesh scooped out and skin discarded
1/2 small red onion finely diced
1 Tomato deseeded and diced
A little red chilli deseeded and diced. Use as much as you can handle or none at all.
1/4 lime, juice only.
Handful chopped coriander
Sea salt and black pepper to taste
1 Tsp rape seed oil [optional]
On a chopping board, add the avocado,red onion,tomato,garlic and chilli if using and chop until its all combined. The more you chop the thinner the guacamole will become so if you like it chunkier don’t chop as long. When well combined add to a clean bowl add the lime juice, rape seed oil [if using] and coriander mix well again and season to taste.
