A quick Easy Goan Chicken Curry ready in under 10 mins. Full of flavour with a creamy coconut sauce perfect served with an array of your favourite Indian snacks.
1-2 Tbsp The Greedy Fox Goan Curry Paste.
2 Chicken Breast, diced
400g Tin coconut milk
1 tbsp corn flour
A handful spinach
1 tbsp oil
In a large bowl add The Greedy Fox Goan Curry Paste to the chicken breast and mix well.
Heat a large pan over a medium high heat when hot add the oil then add the chicken, cook until just starting caramelise and nearly cooked though.
Mix the corn flour in to the coconut milk and add to the chicken.
Add the spinach and mix well.
Let the curry simmer for 5mins or until at you desired thickness.
[Add a splash of water if it over thickens or for reheating the next day]
