These Deep Fried Coconut prawns are as simple as they are delicious, rolled in panko breadcrumbs, coconut and your favourite Greedy Fox seasoning they are soft and crunchy and are an easy party food idea or a brilliant Mexican starter.

Ingredients

Uncooked, peeled and deveined Prawns, around 20 in total

80g Unsweetened desiccated coconut

100g Panko breadcrumb

1 Egg

Flour

Oil for frying

Your favourite Greedy Fox Seasoning. Caribbean, Cajun and Mexican are our favourites.

Method

Pre heat fryer 170deg

In a small bowl whisk the egg

In a another bowl mix coconut and Panko breadcrumbs add a heaped tbsp of your favourite Greedy Fox seasoning

Add a few tbsp of flour to a plate

Roll prawns in flour

Dip into the egg

Roll prawn through the coconut and panko mix

Deep fry for 2-3 mins or until cooked through and golden.
