Creole Bass and Cavolo Nero by The Greedy Fox

Our Creole Bass and Cavolo Nero is a real treat. We don’t get to cook with fish as much as we would like because of the cost and buying expensive ingredients is not what The Greedy Fox is all about. However my Dad loves to fish (Fisherman Col) so occasionally he turns up at our door with a real treat! A brilliantly simple and quick healthy dish. This dish is packed with so much goodness and flavour with the bass and cavolo nero, you will love it.

Serves 4

Ingredients

1-2tsp Rape seed oil
400g Sea Bass from sustainable sources, Cut into bitesize chunks.
1 medium onion diced
150g sweetcorn
400g tin Chopped Tomatoes
100g Passata
200g Chopped Pineapple
1 heaped Tbsp The Greedy Fox Cajun Seasoning

Method

Fry the onion in the oil over a medium heat for 5 minutes.
Add The Greedy Fox Cajun Seasoning and sweetcorn cook for another minute.
Add the rest of the Ingredients cover and cook for 7-10mins until the fish is cooked through.
Season to taste
Serve with mashed potato.
