This Slow Cooker Moroccan Shepards Pie is a deliciously exotic take on a true British classic. You’ll use sweet potato for the topping, which pairs perfectly with the fragrant Moroccan Seasoning. A beautifully simple warming family meal for those cooler.  nights. Serve with your favourite crusty bread and or some veg such as broccoli

Ingredients

1tbsp tomato puree
750g Lamb mince or left over lamb from your roast
1 onion roughly chopped
Sprig of thyme
1tbsp worcestshire sauce
100g peas
2 carrots roughly chopped
750g mashed sweet potato
1 1/2 Tbsp The Greedy Fox Moroccan seasoning
1x400g tin chopped tomatoes
100 ml lamb/chicken stock
1 heaped Tbsp Flour
Salt and pepper to taste
Coriander to garnish [optional]

Method

pre-heat slow cooker to low.

In a large frying pan over a med/high heat add the oil and cook the onions and carrots for 5 mins.
Add the mince and The Greedy Fox Moroccan seasoning and brown off mince around 5-7 mins.[skip this step if using left over lamb]
Push the mince mixture to one side of the pan and Squeeze in the tomato puree and cook for a min then mix.
Stir in the flour.
Add the tin tomato and stock cook for another 5 mins. Season to taste
Stir 1/2tbsp The Greedy Fox Moroccan Seasoning through the sweet potato mash.
Pour the mince mixture into the slow cooker and stir through the peas and the peas top with the sweet potato mash and cook for 5hrs.
Set to warm for 30mins, and garnish with the coriander then serve the Slow Cooker Moroccan Shepherds Pie with your favourite crusty bread and or some veg such as broccoli.

These really are the most perfect, perfect chips/Wedges. Ready in well under an hour. Why not make a large batch and just before cooking place in the freezer to cook when required [adjust cooking times accordingly]

Ingredients

Large potatoes

The Greedy Fox Seasoning of your choice

oil

Method 

Chop the potatoes into 1cm thick chips. For wedges cut the potatoes in half then each half into half again then each quarter into 2/3 wedges [depending on size of potato]

Bring a large saucepan of salted water to a boil

Preheat oven 200 deg

Carefully add the chips/wedges boil for 6/7 mins until soft to touch but not falling apart.

Drain potatoes and leave for 5mins to steam dry.

For over 1-2tbsp oil to potatoes and toss to coat.

Add 1-2 tbsp of your favourite Greedy Fox Seasoning [If using chip salt season after cooking]

Place on a baking tray and bake for 25-30 mins or until golden and crispy, give wedges an extra 10 mins.

Serve these Perfect chips/wedges as you choose they are great on their own or just as good

Slow cooker Moroccan Lamb Shawarma by The Greedy Fox

This delicious slow Cooker Moroccan Lamb shawarma is packed full of warming middle eastern flavour. Serve with flatbreads, salad, pomegranate and cous cous for a real Moroccan treat.

Ingredients

1.5kg Lamb Shoulder

1 White Onion, sliced

1 400g Tin Chopped Tomato

Coriander roughly chopped

1 Tsp Garlic, we use a lazy variety

250ml Good Quality beef stock

1 Tbsp The Greedy Fox Moroccan Seasoning

oil

Salt

Method 

Cut all visible fat off the lamb and discard.

Heat a frying pan and add the oil

Season the lamb with salt and sear on all sides in the pre heated frying pan.

Add the beef stock, tomatoes, onion, garlic and The Greedy Fox Moroccan Seasoning to the slow cooker and mix well.

Place the seared lamb on top of the onion mixture, cover.

Cook on high for 1 hr the reduce the heat to low and cook for 7hrs.

Remove the meat from the slow cooker and roughly carve into bitesize chunks.

Stir through the coriander.

Serve this slow cooker moroccan lamb shawarma in pitta breads with pomegranate, cous cous and yogurt. Or on its own with cous cous.

Top Tip, Remove the meat 1hr from finishing time and finish on the bbq, this makes it even more awesome finished over hot coals.

This is a foolproof Falafel recipe, the beauty of Falafel is the versatility of it and the cost of chickpeas makes this a real budget recipe. If you are Vegan or Vegetarian this will become one of your ‘go-to’ recipes. As an added bonus these are baked falafel so they are low fat too. Falafel ingredients are very simple, its essentially just chickpeas, flour and seasoning. Thats why The Greedy Fox Seasonings lend themselves perfectly to Falafel…just pick a seasoning that takes your fancy and off you go.

If you want to you can make these into falafel burgers, just change size of the patties.

Ingredients 

1x400g Tin of Chickpeas, drained and dried.

1Tbsp The Greedy Fox Moroccan seasoning

1/2tsp Garlic [we use lazy]

1/2Tsp Ginger [we use lazy]

Small handful Coriander [stalks an all]

1/2 small onion

Red Chilli as much as you like. we used 1/2 a deseeded chilli.

3Tbsp Gluten free plain flour. [normal flour will work]

Salt and pepper to taste.

 

Method

Place all ingredients except the flour and salt and pepper into a blender and pulse until the mixture resembles a crumbly dough.

While pulsing the chickpea mix add the flour 1Tbsp at a time until you get a mouldable dough [You may not need all the flour]

Roll into small walnut size balls [you should make around 10] and squash into patties. Leave to set covered in the fridge for 30 mins. This stage isn’t essential but may make frying a little easier.

Remove from the fridge.

Heat the oil over a hight heat and fry for 3-4mins each side or until cooked through and golden.

Or spray with a little of your low fat cooking spray and bake at 200 deg for 15mins turning halfway.

Best served hot but can be eaten cold.

This Moroccan Turkey Stuffed Aubergine recipe is a perfect ‘One I prepared earlier’ dish. Get it ready in the morning and just pop it in the oven when you’re guests arrive and serve as a delicious dinner party starter. We use turkey mince as a low fat alternative to beef mince and it really soaks up the flavour. Our Moroccan blend of herbs and spices is made up of our unique blend of Cumin, Ginger, Sea Salt, Paprika, Black Pepper, Cayenne Pepper, All Spice, Cloves, Turmeric, Coriander and Chilli and it will give this dish a real edge.

Ingredients

1 Aubergine

1/2 White onion diced

150g Turkey mince lamb mince also works well.

1/2 Red Pepper chopped

100gr Passata

125gr Cheddar grated

1Tbsp The Greedy Fox Moroccan Seasoning

1tsp rape seed oil or your healthier alternative

 

Method

Pre heat oven 180 deg

Cut The aubergine in half lengthways and score the flesh in a criss-cross pattern being careful not to cut all the way through. Place in a baking dish side by side and brush with a little oil and season with salt and pepper.

Bake for 30mins or until flesh is soft and tender.

Meanwhile heat your oil in a pan and fry the onion and The Greedy Fox Moroccan Seasoning and red pepper over a medium heat for 10 mins Add the turkey mince and fry for another 4-5mins. Stir in the tomato passata and simmer for 2 mins. Taste and season if you think it needs it.

Remove the aubergines from the oven and scoop out the flesh making sure to leave the skins intact and a small layer of flesh in the bottom.

Mix the flesh with the turkey mix and fill the aubergine boats top with cheese and coriander.

Turn oven up to 220deg and return aubergines to the oven and bake for 10mins or until the cheese is bubbly and golden.

This easy Moroccan Chicken Recipe is one of those recipes that look so incredibly difficult but we promise its a really simple recipe, with just 4 steps! It looks like something you would save for a special occasion meal or a dinner party but is so easy you can feel like your dining out with a midweek meal.

Our Moroccan seasoning works fantastically with the apricots, that mouth watering mix of sweetness and the full flavour of of spices. The other great thing about this recipe is the cost, chicken thighs are a real budget meal winner. The crispy chicken skin just finishes this meal off perfectly.

Serves 2, easily doubled.

Ingredients

4 boneless chicken thighs. Ask you butcher to do this.

1-2 Tbsp The Greedy Fox Moroccan Seasoning.

20g Feta cheese (or mozzarella), finely chopped.

20g Dried Apricots, Finely Chopped

1 Tbsp Chopped Coriander

 

Method

Pre heat oven 200 degree

Mix together in a bowl, the Feta Cheese, Apricots and Coriander. Divide the mix into 4.

Lie the Chicken thighs out flat and layer the mix down the middle of each thigh. Fold the thigh in half and secure with a cocktail stick.

Place on a baking tray and cook in the pre heated oven for 25-30 mins or until cooked through.

Suggestion.

Serve with The Greedy Fox Cauliflower Cous Cous. Substitute the Mexican Seasoning for the Moroccan

A healthy kebab recipe? Really? Yes really! These Moroccan Chicken Gyros are like a ‘dirty’ kebab without the calories! We make this recipe at least once a week and very often will make these on a Saturday and when we get home from a night out just pop them straight under the grill for the perfect beer munch(ok so often is a stretch, we are parents of two young children so our Saturday ‘nights out’ are few and far between!). When we first started making these we used to get the butcher to bone our chicken thighs, now they are readily available in supermarkets already butchered.

These are also a brilliant stow shopper for a BBQ, they look so impressive when you just slice the meat off and pop it in a pitta bread. Once you’ve tried these you will always opt for the healthy kebab recipe and theres no risk of adding spicy spuds to your order at the kebab shop!

Serves 4

Ingredients

Chicken Gyros

8 Boneless chicken thighs, ask your butcher to do this or some supermarkets are starting to sell them now

1-2 Tbsp The Greedy Fox Moroccan Seasoning

Pitta Bread

Lemon wedges

Harissa yogurt

2 Tbsp Yogurt

1 Tsp Harissa

 

Salad

1/4 Iceberg lettuce

1/2 Red Onion

1 Tbsp Parsley

 

Method

Pre heat grill med/high

If you are using wooden kebab sticks, soak for 30 mins prior to using.

Season chicken thighs with 1-2 tbsp The Greedy Fox Moroccan seasoning

Skewer on 2 kebab sticks 1 at each end of the thigh leave a little space and load another thigh until all the meat is gone. 4 thighs per 2 Kebab sticks

Cook for 20-25 mins until cooked all the way through, turning every 5 minuted or so and basting with the juices as you go.

Meanwhile make the Harissa yogurt and the salad.

Mix 2tbsp Yogurt with 1 tsp Harissa.

Salad

Finely chop the lettuce and red onion. Mix together in a large bowl with the parsley.

To serve.

Chop the chicken thighs in half to make 4 kebabs load your pitta bread with the chicken breast, salad and Harissa yogurt and enjoy.

Serves 2

Ingredients

350 gr Lamb mince

1/2 White Onion minced

2 Tsp The Greedy Fox Moroccan Seasoning

1 Tbsp fresh chopped Coriander

2o gr breadcrumbs

Salt and pepper

 

Method

Pre Heat grill med/high

Put all ingredients into a bowl and mix well until everything is well combined.

Divide mixture into 2 equal sized balls and shape into a burger.

Cook under the grill for 7 mins each side or until cooked through.

Perfect served in a brioche bun topped with a slice of beefsteak tomato and a little KoKo yogurt and sciracha.

This Moroccan Lamb Kofta recipe is super easy, super tasty and perfect for freezing so when the British weather is raining in the morning and glorious in the afternoon, you are BBQ ready. We enjoy these in so many different ways, with potatoes or just with a pitta bread and a hearty salad.

Ingredients

500 g Lamb mince

2 Tsp The Greedy Fox Moroccan seasoning

1/2 White onion chopped

50 g breadcrumbs, we used panko but any will work well

2 Tbsp chopped fresh coriander

5 Kebab skewers soaked in water for 20 mins

 

Method

Pre-heat grill med-high

In large bowl mix all ingredients together until well combined.

Shape into 10 50gr sausages and skewer 2 per kebab

Cook under the grill for 3 minutes each side 10-12 in total or until cooked right through.

Our low fat Hummus is the best side dish ever! We make this so often as a taster at food shows and people love it (we have even converted lots of Hummus haters!) Once you have tasted this without oil it will leave you wandering why oil was ever added to hummus in the first place. Plus it makes it Slimming Friendly. We have discovered just how incredible Aquafaba (the chickpea water) is, it makes a brilliant egg white substitute. Its so satisfying knowing that you can make something amazing out of something you would have previously just thrown away. Adding a little Greedy Fox Seasoning lifts the Hummus to new heights. Add any seasoning you are in the mood for whatever compliments your dish!

Ingredients

400g Can of Chickpeas (reserving a little of the liquid)
1tbsp of Tahini
1 tsp Garlic
1 tsp of Sea salt
6 tbsp Chickpea water (roughly, it really depends on the consistency you like)
1tsp Lemon Juice
Coriander or Parsley (optional)
1 tsp of The Greedy Fox Seasoning (whichever you fancy!)

Method

1) Drain the chickpeas (keeping back the liquid)
2) Add all ingredients into food processor and blend

3) Sprinkle a little extra seasoning on top
