Easy Sweet and Sour Chicken by The Greedy Fox

The Chances are you’ve had sweet and sour from the takeaway but this Easy Sweet and Sour Chicken made at home is even better.

Ingredients

Serves 4

For the Sauce

1/2 white onion roughly chopped

300g Tomato Ketchup

100g soft brown sugar

1 Tsp Garlic

2Tbsp light Soy Sauce/gluten free alternative

1 tsp Garlic, crushed

100g Malt Vinegar

1tsp Fresh Ginger finely chopped

1 tsp oil

50 grm pineapple chunks [from a tin]

50 ml juice from the tin pineapple chunks

For the Chicken

1 Tbsp The Greedy Fox Chinese 5 spice

2 large Chicken Breast cut into bitesize chunks

1 Tbsp Cornflour

1/2 Red Pepper chopped into bitesize pieces

1/2 Green Pepper chopped into bitesize pieces

1x125gr pack baby corn larger ones cut in half.

1 tsp oil

Method

For the sauce

In a large saucepan fry the onion over a medium heat until soft, around 7 mins

Add the garlic and ginger cook for a further 1-2 mins, remove from the heat.

Pour in the ketchup, vinegar, sugar and soy sauce bring a boil and reduce the heat to a simmer. Simmer until thick and syrupy. Remove from the heat and add the pineapple chunks and juice.

For the Chicken

Mix 1 tbsp Cornflour with 1 Tbsp The Greedy Fox Chinese 5 spice toss the chicken in the flour mixture to coat.

Add half the oil to a large frying pan or wok and fry the chicken until cooked through. Remove from from pan and set aside.

In the other half of the oil fry the veg until cooked but still with a little bite, when cooked add the chicken back and pour over the sauce.

Simmer until piping hot, serve immediately.

Sweet and Sour Veggies by The Greedy Fox

Sweet and Sour Veggies is one of our favourite takeaways, we think this recipes takes it to a new level. Super quick and simple it’ll be ready before it would’ve been delivered.

Ingredients

Serves 4

For the sauce.

300g Tomato Ketchup

100g Malt Vinegar

1/2 Onion roughly chopped

1 tsp Garlic

1 Tsp Ginger

100g Light soft brown sugar

2Tbsp soy sauce/ Gluten Free alternative

Pineapple chunks [from a tin]

25ml Pineapple Juice [saved from the above tin]

Veggies

A large handful of each…..

Mange tout

Green Beans, chopped into bitesize pieces

Cauliflower, broken into bite size florets.

Mini sweetcorn. Larger ones halved lengthways.

1 Tsp The Greedy Fox 5 spice

 

Method

For the sauce

Fry the onion over a medium heat in a large heavy bottomed saucepan for 5 mins until soft.

Add the garlic and ginger and cook for 1 min.

Combine all the rest of the Sweet and Sour sauce ingredients with the onion and garlic and bring to a boil, reduce the heat immediately and simmer 10-15 mins until thick and syrupy.

Veggies

While the sauce is simmering stir fry the veg in The Greedy Fox 5 spice for 4-5 mins until soft.

Taste and season with a little salt.

Add the veggies to sauce and carefully stir so everything is well coated.

Serve this Sweet and Sour Veggie while hot over boiled rice.

These Honey and Soy 5 Spice Chicken is a brilliantly simple mid week meal quick, Perfect after a long day working. Served with boiled or fried rice and stir fried broccoli or pak choi it will leave you comfortably full.

Ingredients 

8 bone in skin Chicken Thighs

1tbsp The Greedy Fox Chinese 5 Spice

3tbsp soy sauce or your gluten free alternative

2tbsp oil

3tbsp Honey

1tsp Garlic

1tsp Ginger

Method

pre heat oven 180 deg

Mix all the ingredients [not the chicken thighs yet]

Now add the Chicken thighs and mix well, leave to marinate for 1 hr/or over night in the fridge.

Place Chicken thighs on a snug fitting baking tray and cook for 40-45 mins or until cooked through and golden, basting every 10 mins.

These Honey and Soy 5 Spice Chicken Thighs are excellent served with boiled rice and stir fried broccoli.

Chinese Lemon Chicken

We love Roast Chicken and this Roast Chinese Lemon Chicken is so simple yet so incredible. Roast Chicken is a smell that reminds us of our childhood, and family meals. Here we have given the humble roast chicken a bit of a twist by adding our Chinese Five Spice Seasoning and a lemon. If you thought normal roast chicken filled your house with an awesome smell, wait until this one is in the oven, pure deliciousness! If you have any leftovers don’t forget about the poor mans duck, once tasted we guarantee it will become a firm family favourite.

Ingredients

1 whole chicken, preferably higher welfare

1 unwaxed lemon

1-2tbsp The Greedy Fox Chinese 5-spice

Salt and pepper

 

Method

Pre heat oven 180deg

Season the inside of the chicken with a little salt and pepper and 1tbsp The Greedy Fox Chinese 5 spice.

Roll the lemon between your hand and the work top to soften and cut into quarters.

Fill the cavity of the chicken with the lemon quarters [they might not all fit]

Season the chicken skin with a little salt and The Greedy Fox Chinese 5-spice.

Roast in the centre of the oven, cook for 30mins per 500g for example a 1.5kg chicken will take 1hr 30mins.

Carefully remove from the oven, cover with foil and a clean tea towel leave to rest for 15-20 mins.

Shred or slice the roast Chinese lemon

chicken serve with rice or in a salad with a little hoi sin sauce.

Don’t forget any leftovers are perfect to make the Poor Mans Duck

Chinese Fried Rice by The Greedy Fox

Chinese Fried Rice

Chinese Fried Rice by The Greedy Fox is a perfect side dish for any Chinese banquet or even a meal in itself. So simple to make from scratch or a brilliant way to use up any leftovers you may have, using The Greedy Fox Chinese 5 Spice you are never far away from creating your own Chinese banquet.

Ingredients

Serves 2-4

2 bags of boil in the bag long grain/wholegrain or Brown rice Cooked and chilled.

1/2 Onion, chopped

50 gr Carrot cut into match sticks

1 Large free range egg, beaten

1-2 Tsp The Greedy Fox Chinese 5 spice

1-2 Tbsp sunflower oil

  sesame oil

4 spring onion, chopped.

1 Tbsp Soy sauce

Method.

Heat oil in a Large wok or frying pan. When hot add onion and carrot cook for 2 mins.

Mix the egg with the sesame oil.

Next add the rice and cook to warm through stir through The Greedy Fox Chines 5 spice.

Pour the egg mix over the rice and leave for 1 min to let the egg set, when set add the soy sauce and stir to combine.

Add the spring onions and cook for a further 1 min.

Season with a little more soy sauce if needed.

Serve as a side dish to accompany your Chinese meal or as a main dish.

Leftover Chinese Chicken aka the Poor Mans Duck by The Greedy Fox

Leftover Chinese Chicken. As the name suggests this recipe is all about using your leftovers so the quantities will change each time you cook it the best thing to do is taste as you are cooking. It’s a tough life. We guarantee that this recipe will be such a hit you will want leftover chicken just so you can have this.

Ingredients

Leftover chicken, shredded

The Greedy Fox Chinese 5 Spice Seasoning

Runny Honey

Light soy sauce.

 

Method

Pre heat frying pan over a high heat

Season leftover shredded chicken with The Greedy Fox Chinese 5 spice. [We use 1 Tbsp per 500g of leftover chicken]

Add to the pre heated frying pan and dry fry until starting to turn crispy

Drizzle honey over the top and toss to coat. Cook for another min or so.

Pour in the light soy sauce and cook again for another min until the soy has all evaporated.

And thats it, It really is that simple.

Serve with rice or top little gem lettuce leaves with cooled chicken and chopped spring onion and cucumber and a drizzle of hoi sin sauce for a little canapés.

Sticky Chinese Ribs by The Greedy Fox

Chinese Sticky Ribs

Ok so we have to be honest these Sticky Chinese Ribs are always going to have a higher fat content than lots of other cuts of meat but for us, rather than dialling for a takeaway or picking up something quick and processed we would much rather have these as our treat for the week.

Ingredients

Serves 2

Ribs

1kg babyback pork ribs chopped into ribs

Salt and pepper.

Sticky 5 spice sauce

1-2 tsp The Greedy Fox Chinese 5 spice

1tsp Garlic

1tsp Ginger

50ml Honey

30ml Soy

50ml Hoi Sin

1tbsp rice wine vinegar. Malt, white wine vinegar is ok here.

Method

Pre heat oven 150 degree

Season ribs well with salt and pepper place in an even layer in a oven dish and cover tightly with foil and bake for 1hr.

Meanwhile place the sticky 5-spice sauce ingredients in a small saucepan whisk to combine and cook over a med/high heat to reduce by a third. Set to one side.

When ready take the ribs out of oven and drain the excess fat into the sauce, mix to combine and drizzle half the sauce over over the ribs making sure they all get a taste.

Return the ribs to the oven uncovered for 30 mins basting every 8mins or so, until sticky.

Drizzle with the leftover sauce and serve immediately.

Top with toasted sesame seeds or for a little heat try topping with fresh chopped chilli.

These roasted chickpeas are delicious nutritious snack full of fibre a great alternative to nuts. We have made them here with our BBQ Seasoning but you can use any. Its a real budget recipe, chickpeas are cheap as chips. To be honest, chickpeas are heavily underated, we make delicious hummus with them and then we reserve the aquafaba (the water from the tin of chickpeas) to make delicious chocolate mousse. Basically if you’re vegan, or trying to eat a little bit more that way then the aqufaba is a fantastic substitute for eggs. Ingredients

1 400g tin chickpea

2tbsp olive oil

1 tbsp Your favourite Greedy Fox Seasoning. We love these in BBQ and Moroccan but as with all our recipes they are interchangeable so grab whichever is closest and go for it!

 

Method.

Preheat oven 220deg

Drain the chickpeas and dry.

Toss them in a bowl with oil and your favourite Greedy Fox seasoning.

Line a tray with baking paper.

Spread the chickpeas in a even layer on the baking tray and bake for 30-40 mins watching the last 5 mins carefully to avoid burning.

Enjoy while hot.

This Chinese Pak Choi recipe is really really simple just a simple steaming and season with The Greedy Fox 5 spice and a little soy sauce and away you go.

Pak Choi is part of the cabbage family it is also known as bok choy, horses ear and Chinese celery cabbage.

Ingredients

1 Pak choi

Soy sauce to tase

Method

Bring a pan of water to a boil and steam Pak Choi for 5mins remove from the steamer and season with The Greedy Fox Chinese 5 spice and soy sauce to taste.

Fried Onion Strips by The Greedy Fox

Fried Onion Strips
These Fried Onion Strips just disappeared from the kitchen table in seconds! From the humble onion to greatness!! The onion is so underated yet have you ever noticed just how many recipes begin with..chop an onion? Here we wanted to make the onion the star of the show and it really is! These are brilliant munchies to scatter around in pots at a BBQ or watching the football.
You can use any of The Greedy Fox Seasonings, literally just choose your favourite and it will work, thats whats so great about an onion, it works with everything! So go forth and make you favourite Fried Onion Strips and let us know.

Ingredients

2 White Onions, Cut in half then sliced
3 tbsp Plain Flour
1-2 Tbsp Your favourite The Greedy Fox Seasoning
1 Pint Full Fat milk
1 Tbsp fresh lemon juice
Oil for Frying

Method

Mix the milk and lemon juice together, leave to stand for 30mins.
Soak the onions in milk and lemon juice for 30mins
Mix the Greedy Fox Seasoning  of your choice with the flour.
Pre heat oil to 170deg.
Grab a handful onions dredge through the flour and carefully put into the hot oil.
Fry for 2 mins or until crispy and golden.
Fry in batches
Perfect with a ice cold beer and the Greedy Fox Ultimate BBQ Sauce or your favourite hot sauce.
