These really are the most perfect, perfect chips/Wedges. Ready in well under an hour. Why not make a large batch and just before cooking place in the freezer to cook when required [adjust cooking times accordingly]

Ingredients

Large potatoes

The Greedy Fox Seasoning of your choice

oil

Method 

Chop the potatoes into 1cm thick chips. For wedges cut the potatoes in half then each half into half again then each quarter into 2/3 wedges [depending on size of potato]

Bring a large saucepan of salted water to a boil

Preheat oven 200 deg

Carefully add the chips/wedges boil for 6/7 mins until soft to touch but not falling apart.

Drain potatoes and leave for 5mins to steam dry.

For over 1-2tbsp oil to potatoes and toss to coat.

Add 1-2 tbsp of your favourite Greedy Fox Seasoning [If using chip salt season after cooking]

Place on a baking tray and bake for 25-30 mins or until golden and crispy, give wedges an extra 10 mins.

Serve these Perfect chips/wedges as you choose they are great on their own or just as good

These Deep Fried Coconut prawns are as simple as they are delicious, rolled in panko breadcrumbs, coconut and your favourite Greedy Fox seasoning they are soft and crunchy and are an easy party food idea or a brilliant Mexican starter.

Ingredients

Uncooked, peeled and deveined Prawns, around 20 in total

80g Unsweetened desiccated coconut

100g Panko breadcrumb

1 Egg

Flour

Oil for frying

Your favourite Greedy Fox Seasoning. Caribbean, Cajun and Mexican are our favourites.

Method

Pre heat fryer 170deg

In a small bowl whisk the egg

In a another bowl mix coconut and Panko breadcrumbs add a heaped tbsp of your favourite Greedy Fox seasoning

Add a few tbsp of flour to a plate

Roll prawns in flour

Dip into the egg

Roll prawn through the coconut and panko mix

Deep fry for 2-3 mins or until cooked through and golden.

Baked cornflake chicken nuggets

Baked Cornflake chicken nuggets are a Greedy Fox family favourite we regularly use our BBQ or Cajun seasoning to make these crunchy delights. Perfect to make with the children but equally enjoyable for the adults.

Baked Cornflake chicken nuggets means this is a low fat meal too.  We strongly believe that cooking with kids and involving them in their food choices means they eat better and it gives them a great start in life. Staying away from the processed food and knowing exactly what goes into a homemade chicken nugget verses a takeaway chicken nugget is a great education.

Oh and we forgot to address the fact that these are made with cornflakes! Well you will just have to trust in us that mixed with our delicious seasonings, you will forget that you are eating a breakfast cereal with your tea!

Ingredients

200g Cornflakes [Crushed]
2 Chicken breasts chopped into nuggety chunks
150ml Greek yogurt
2tbsp Cajun or BBQ Greedy Fox seasoning

Method
Pre Heat Oven 180º

Mix 1tbsp of The Greedy Fox Cajun or BBQ seasoning with the yogurt.
Mix the chicken into the yogurt and leave to marinate for at least an hour.
Add the other tbsp of Greedy Fox with the crushed cornflakes and mix well.
Remove the chicken from the yogurt marinade and drip off the excess.
Carefully roll each nugget in the cornflake mix making sure each one is well coated place on a lined baking tray.
Bake for 20-25mins.

This is a real taste of South Louisiana. The Greedy Fox Fried Cajun Shrimp is a perfect summer snack full of crispy cajun flavour a sort of shrimp popcorn. Perfect shared with friends over a cold lager on a warm summers night. This is true party food, you lose control of your hand as it just goes back and forth to the basket! A brilliant starter dish too. And if you fancy a dip just add a little more Cajun Seasoning to some yoghurt or mayonnaise and voila!

Lets be honest this is not an overly healthy meal but at The Greedy Fox we are about wholefoods, cooking from scratch and cutting our processed food. Your body (and your mind) needs a little bit of fat and naughtiness but its still clean food. Its not pumped full of nitrates, e-numbers, stabilisers or chemicals to increase the shelf life its just good ingredients put together with our awesome seasoning.

Ingredients

1 teaspoon granulated sugar

Sea salt

500g small shrimp, peeled and deveined

200g gluten free plain flour/any plain flour will work

2 tablespoons cornstarch

1tbsp The Greedy Fox Cajun Seasoning

1 teaspoon confectioners’ sugar [optional]

150ml cold lager

2 roasted red peppers, drained and cut into bite-size pieces (we find peppers from the jar really handy)

Vegetable oil, for deep-frying

Lemon wedges, cocktail sauce and/or tartar sauce, for serving

 

Method

Mix 750ml  of iced water, the granulated sugar and 1 teaspoon salt in a medium bowl. Add the shrimp and leave for 15 minutes, then drain well and pat dry.

Dry the bowl return the shrimp to the bowl and toss with 1/2 teaspoon Cajun seasoning.

Whisk the flour, cornstarch, confectioners’ sugar[if using], the remaining Cajun seasoning and the beer in a large bowl to make a smooth batter.

Add the shrimp, and roasted peppers and stir until evenly coated.

Heat 2 inches of vegetable oil in a heavy bottomed saucepan over medium-high heat until a cube of bread dropped in floats and is golden. Or use a deep fat fryer preheated at 170c

Working in batches, remove the shrimp, and roasted peppers from the batter with a slotted spoon, transfer to the hot oil and fry until golden, about 3 minutes.

Remove and drain on paper towels; season with salt. Serve with lemon wedges, cocktail sauce and/or tartar sauce.

These Beetroot Fritters are a great low fat recipe. Its packed with goodness and gives you one of your five a day. We love to use seasonal recipes. Veg tastes so much better when its in season which in the UK is around early July. We use a fantastic veg supplier who are great and getting whats locally grown and in season www.veg-inabox.com

This is a quick, easy recipe for vegans. It works well as a side dish. There are all sorts of different types of beetroot you can use too, Alto beetroot, Boltardy beetroot, Chioggia beetroot, Burpees Golden beetroot, Crimson King beetroot, Pablo beetroot and Red Ace beetroot amongst others. Have a look next time you buy beetroot and see which variety you have.

Ingredients

250gr Grated Beetroot

100gr washed and grated potato

1tbsp The Greedy Fox Caribbean or Cajun Seasoning

1tbsp gluten free plain flour, any plain flour will work here.

1/2 Small diced white onion

2 Tbsp olive oil or your low fat alternative

 

Method

Gently fry the onion over a medium heat in 1 tsp of the oil until soft about 5-7 mins.

Meanwhile mix the beets and potato and squeeze out as mush water as possible.

Add the onion, The Greedy Fox Caribbean seasoning and flour.

Taste and adjust the seasoning as required.

Shape into four equal sized balls and flatten to form patties.

Fry in the remainder of the oil 4-5 mins each side or until crispy

A healthy kebab recipe? Really? Yes really! These Moroccan Chicken Gyros are like a ‘dirty’ kebab without the calories! We make this recipe at least once a week and very often will make these on a Saturday and when we get home from a night out just pop them straight under the grill for the perfect beer munch(ok so often is a stretch, we are parents of two young children so our Saturday ‘nights out’ are few and far between!). When we first started making these we used to get the butcher to bone our chicken thighs, now they are readily available in supermarkets already butchered.

These are also a brilliant stow shopper for a BBQ, they look so impressive when you just slice the meat off and pop it in a pitta bread. Once you’ve tried these you will always opt for the healthy kebab recipe and theres no risk of adding spicy spuds to your order at the kebab shop!

Serves 4

Ingredients

Chicken Gyros

8 Boneless chicken thighs, ask your butcher to do this or some supermarkets are starting to sell them now

1-2 Tbsp The Greedy Fox Moroccan Seasoning

Pitta Bread

Lemon wedges

Harissa yogurt

2 Tbsp Yogurt

1 Tsp Harissa

 

Salad

1/4 Iceberg lettuce

1/2 Red Onion

1 Tbsp Parsley

 

Method

Pre heat grill med/high

If you are using wooden kebab sticks, soak for 30 mins prior to using.

Season chicken thighs with 1-2 tbsp The Greedy Fox Moroccan seasoning

Skewer on 2 kebab sticks 1 at each end of the thigh leave a little space and load another thigh until all the meat is gone. 4 thighs per 2 Kebab sticks

Cook for 20-25 mins until cooked all the way through, turning every 5 minuted or so and basting with the juices as you go.

Meanwhile make the Harissa yogurt and the salad.

Mix 2tbsp Yogurt with 1 tsp Harissa.

Salad

Finely chop the lettuce and red onion. Mix together in a large bowl with the parsley.

To serve.

Chop the chicken thighs in half to make 4 kebabs load your pitta bread with the chicken breast, salad and Harissa yogurt and enjoy.

These Cajun Salmon Fajitas by The Greedy Fox are delicious. Its essentially a tray bake recipe so super simple. Its also a great family meal and a way of getting kids to eat more fish! Fajitas are always a brilliant way to get everyone around the table. A super quick and easy family dinner.

Serves 2, easily doubled or even tripled.

 

Ingredients

1/2 Red Pepper sliced

2 Salmon Fillets from sustainable sources

1/2 Green Pepper sliced

2 tbsp The Greedy Fox Cajun Seasoning

1/2 Red onion root left intact and cut into 4 wedges

2 tbsp Rapeseed oil or a few sprays of your healthy alternative

Warmed wraps

 

Method

Pre-Heat Oven 180 degree

Add the potato to the sliced peppers and onions and toss in the oil.

Season with 1 tbsp The Greedy Fox Cajun seasoning toss again to coat the veggies in the seasoning. cook for 20 mins.

Turn oven up to 200 degree

Season salmon with 1 tbsp The Greedy Fox Cajun seasoning.

Place salmon on top of the veggies and return to the oven, cook for 15 mins.

Serve and build your fajitas straight out of the tray, BE CAREFUL IT WILL BE VERY HOT!!!

Our low fat Hummus is the best side dish ever! We make this so often as a taster at food shows and people love it (we have even converted lots of Hummus haters!) Once you have tasted this without oil it will leave you wandering why oil was ever added to hummus in the first place. Plus it makes it Slimming Friendly. We have discovered just how incredible Aquafaba (the chickpea water) is, it makes a brilliant egg white substitute. Its so satisfying knowing that you can make something amazing out of something you would have previously just thrown away. Adding a little Greedy Fox Seasoning lifts the Hummus to new heights. Add any seasoning you are in the mood for whatever compliments your dish!

Ingredients

400g Can of Chickpeas (reserving a little of the liquid)
1tbsp of Tahini
1 tsp Garlic
1 tsp of Sea salt
6 tbsp Chickpea water (roughly, it really depends on the consistency you like)
1tsp Lemon Juice
Coriander or Parsley (optional)
1 tsp of The Greedy Fox Seasoning (whichever you fancy!)

Method

1) Drain the chickpeas (keeping back the liquid)
2) Add all ingredients into food processor and blend

3) Sprinkle a little extra seasoning on top

These roasted chickpeas are delicious nutritious snack full of fibre a great alternative to nuts. We have made them here with our BBQ Seasoning but you can use any. Its a real budget recipe, chickpeas are cheap as chips. To be honest, chickpeas are heavily underated, we make delicious hummus with them and then we reserve the aquafaba (the water from the tin of chickpeas) to make delicious chocolate mousse. Basically if you’re vegan, or trying to eat a little bit more that way then the aqufaba is a fantastic substitute for eggs. Ingredients

1 400g tin chickpea

2tbsp olive oil

1 tbsp Your favourite Greedy Fox Seasoning. We love these in BBQ and Moroccan but as with all our recipes they are interchangeable so grab whichever is closest and go for it!

 

Method.

Preheat oven 220deg

Drain the chickpeas and dry.

Toss them in a bowl with oil and your favourite Greedy Fox seasoning.

Line a tray with baking paper.

Spread the chickpeas in a even layer on the baking tray and bake for 30-40 mins watching the last 5 mins carefully to avoid burning.

Enjoy while hot.

Cajun Frickles by The Greedy Fox

Cajun Frickles

Cajun Frickles make a perfect accompaniment for a bbq or a brilliant side dish in general. If you love pickles and love fried food then The Greedy Fox Frickles are right up your street. If you have never heard of frickles before, well, welcome. A frickle is a deep fried pickle whether they are pickle wedges or pickle chips. I first experienced frickles at one of our local restaurants in town and fell in love with them. So her is our take on them.

Ingredients

250g sliced Gherkins

200g gluten free plain flour

225g Soda water/lager

1tbsp The Greedy Fox Cajun Seasoning

Oil for frying.

 

Method

Pre Heat oil 180deg

Mix the Flour and Greedy Fox Cajun seasoning in a large bowl season with a little salt. Make a well in the centre of the flour and slowly whisk in the soda water/lager.

Pat dry the gherkins with a piece of kitchen towel or a clean tea towel.

Add half the pickles to the batter, remove with a slotted and carefully put into the hot oil 1 at a time and fry for 1-2mins until golden. Repeat with the other half.

Drain on kitchen paper and serve while hot.

Perfect with your favourite lip tingling hot sauce.
