Caribbean Prawns and Mango Salsa

This recipe is designed for 2 as light lunch or starter



8 Large Prawns shell on. Peeled and deveined

2 Tsp The greedy Fox caribbean seasoning

2 Tsp water


1 mango, peeled and finely diced

1/2 avocado, finely diced

1/2 small red onion finely diced

1/2 Red bell pepper finely chopped

75 gr cooked sweetcorn, cooled.

2 tablespoons chopped fresh coriander

1 tablespoon fresh lime juice

1/4 teaspoon salt


Peel and devein the Prawn

Mix The Greedy Fox Caribbean seasoning with the water to make a paste mix in a bowl with the prawns.

Next add all the salsa ingredients into a bowl large to mix it all, mix and season to perfection.

Grill shrimp under a sign heat for 2 mins on each side or until cooked through and pink.

Perfect served with The Greedy Fox Jerk Aioli, a bruschetta and an ice cold beer.
