Caribbean Coconut Chicken Kebab by The Greedy Fox
This is our super easy Caribbean Chicken kebab recipe. The smell of coconut milk always reminds us of summer. It used to be one of those things that you had to search high and low for and considered yourself a real foodie when you found it. Now you can buy in all supermarkets (and a top tip you can normally find it much cheaper in the World Foods section of the supermarket.
This Caribbean recipe only uses a small amount of coconut milk, keeping this a low fat meal that is quick and easy to prepare.
2 Chicken Breast, sliced into thick slices
50ml Coconut milk
1 Tbsp honey
1/2 Lime (juice only)
1/2 Red chilli, finely diced
1/2 Red/Green and yellow pepper cut into chunks
If using wooden kebab skewers soak them in cold water for 30mins.
In a large bowl mix the coconut milk, honey, The Greedy Fox Caribbean seasoning and lime juice.
Add the chicken to the marinade, leave in the fridge to marinate for at least an hour.
Remove the chicken from the fridge and carefully thread the pepper then chicken alternating on each skewer until all the mix is gone.
Grill for 5-7 mins each side or until cooked through.
