Bubble and squeak, poached egg and hollandaise sauce. by The Greedy Fox

Our Bubble and Squeak is the perfect way to use up left over potatoes and veg, topped with a poached egg and the luxurious hollandaise sauce. This will transform all your left overs into a meal fit for a king.

Here is what we used but you can use any left overs from sunday lunch or cook some especially, either way its sure to taste delicious.

We’ve used the Burger and Steak seasoning here we also use the Mexican seasoning to mix things up.

Ingredients.

Left over Roast potatoes

left over veg. We used kale, cavolo nero and sprouts

1 egg white

The Greedy Fox Burger and Steak Seasoning

1 tbsp plain flour we used doves gluten free plain flour. But any plain flour will work.

A handful chopped chives

A small handful chopped Thyme.

1Tbsp oil

Salt and Pepper to taste

Poached Egg

Hollandaise Sauce

Method.

Place the first 7 ingredients into a food processor and blend until well mixed but leaving with a little bite. If you don’t have food processor place ingredients in a large bowl and mix well.

Taste and season with a little salt and pepper if needed.

Form the bubble and squeak mix into burger sized patties.

Make the hollandaise sauce.

Fry over a medium heat until warmed all the way though.

Poach the egg.

Top the bubble and squeak with the poached egg and hollandaise sauce.

Garnish with a little chopped chive and fresh thyme.
